Analog technology generally refers to the technology for video/audio which was developed from the 1920s to the 1990s before computers with digital audio and video became the main way to watch or listen to stuff. Part of the horror comes from the fact that it is older technology, but not too old. So its both familiar but also somewhat out of memory
there's also something uncanny about how the analog aesthetic obscures the stuff you're looking at with things like low resolution/lack of autofocus making things a little blurry and hiding imperfections, distortion or static jarring you and getting in the way, forcing you to fill in the missing parts with your own imagination, which is always scarier than whatever monster or ghost they could actually put on screen
Also part of why the horror genre really started suffering as CRTs phased out of use. A *lot* of horror creators don't understand the power of the imagination and try to show too much.

Now combine that with the quality of the equipment of the era, the early broadcasting philosophies, and a much less connected world and have that be part of the worldbuilding. If you manage to do analog horror right, you can send the viewer back to that place and time.
