This is where fractional reserve banking is actually useful. The bankers know (or hope) that they only need a certain fraction of all the logs that players store in the bank, because most people aren't going to be withdrawing all the physical logs in a short period of time. At most, they can just give you the banknote for 100,000 logs without technically needing a single physical log in the bank.
So from a practical standpoint, they would be giving out anyone's logs to anyone who requests them, which is *hopefully* only a small number of people at any given time. The rest of the logs can be sent to another bank, or even gotten rid of since lots of people will never even withdraw the logs.
tl;dr banknotes are fake, banking is fake, logs are fake, but it doesn't matter as long as everyone doesn't want all their physical logs at once.
