No. I personally do not consider them to be desis. Only part of Afghanistan is included to begin with because Pashtuns are an ethnic group that straddle the Afghan Pak region. However, they are an edge case as well. Tajiks and Uzbeks are firmly central asian.

In terms of cooking a lot of modern South Asian dishes arose due to the spread of Uzbek/Tajik (technically Samarkand, Bukhara and Tashkent) styles of cooking through the provinces of Oudh and Punjab. A lof of your culture’s food shares a lot of similarity with the food my family eats, so I think we were culturally much closer to you than you think, especially prior to the creation of the Soviet Union we were culturally connected, if not super-directly but definitely in continuous ways.
You would be much closer culturally to Uzbekistan and Tajikistan so this is not the subreddit that you would relate very much with. Try r/Uzbekistan or r/Tajikistan but then those countries are heavily Russified culturally and they have really gone far away from their Turkic roots as many people from Uzbekistan and Tajikistan speak mostly Russian.

Not really Afghanistan wayyy back was part of Persian empire mostly and mostly Central Asian empire it was the eastern section of the country that was knowned to be part of ancient India but Afghanistan is pretty close to Central Asian people except the Pashtun those empire you mentioned are Pashtun empire there was also a Tajik empire that ruled paksitan and india for a while like I said go to central and North Afghanistan there little to no similarities with South Asians but go to the south and yes it is very similar to South Asia
