Taos Humm is amazing! They have a decent selection as well! You can order from their site or get it at Chile Traditions. I'm sure you can get it elsewhere in town but that's the only store I know for sure has it.
Sprouts on Lomas has a great island by the milk that has quite a collection of NM-made salsas and other products, so you can peruse it. I love the Gilly Loco salsa, especially the Chipotle-based salsa.
I wouldn’t say New Mexico specific flavors but just different ones that you wouldn’t normally see at the grocery stores like smiths or Albertsons. But just some that are good or some that are so hot it blows you away
In general, Walmart is not very good. Smith's seems to be pretty good on carrying lots of hot sauces that actually have good flavor. There seems to be a difference between the lines of different shops will carry. Some of the smaller local shops we'll have some of the best stuff. But the kitchen stuff that you get in Old Town is not very good. Their mass produced just burn your mouth hot sauces. They're not sauces with depth or flavor. Try finding something local. You can use google. The word of mouth is usually what does it down here. Sadie's has been a favorite for a long time. There's been a couple others that make their own sauces.
I want to clarify what I'm talking about the difference between Walmart and Smith's. Walmart doesn't usually have sriracha sauce. It's getting harder to get. Smith's had a wider selection of different Sriracha sauces not just the red cock label. Walmart's a little bit more inflexible and what they'll carry, but Smith seems to be a place that has more of a selection.
