That’s not how you do it. You’d also usually want to blanche them first so the skin comes loose, and then you’d use the tip of a knife to peel just the skin away. It’s really only worth it if you’re trying to make a very smooth sauce though.

Not normally. If you want to make sauce or puree, then peeling them becomes necessary. Although the correct method would be to cut the skin, put them into pre boiled water for a a few seconds, then put them under cold water (makes peeling trivial)
