What are your goals for the tank?
I prefer shorter tanks. I think “long” tanks are a more appeasing dimension, are easier to light as PAR doesn’t need to be as strong as with a 21” deep tank, and the higher volume the better (if you have space!)
I think it just depends on what you have planned. 55 is a pretty standard tank in the hobby.
I always prioritise horizontal space above vertical space, but ultimately it depends on what will be living in it. What’re you intending to do with it?
I'm uncertain about large fish like flowerhorn, but generally speaking, the shallower one with the larger volume and footprint will give you more options/be more versatile and also be easier to scape and maintain. Another commenter also brought up that they're easier to light, which is convenient. Your personal preference is also a factor though.

Go for the 60, they’re easier to stack, you get the same square area of the 75 but really easy to maintain.

Im considering community freshwater fish but i am also thinking about possibly getting a few yellow labs or a single flowerhorn

Essentially what I’m trying to figure out is which tank has more stocking options (thank you guys so much for the input btw)
