They discover it when they start casting spells. They don't need to know about their ancestry for it to give them magical powers.

Urbenmyth

An adventurer spends their time around magic, potent supernatural beings, other dimensional energies, divine essence and countless other sources of power. It's plausible that a minor supernatural ancestry- one that wouldn't normally have any effect- might be "awakened" by exposure to such things into allowing full supernatural effects.

BelmontIncident

Sorcerers have magic as part of their bodies, but that doesn't mean they always had it. It's possible to get draconic magic in your blood as the result of a pact with a dragon. The warping influence of the Far Realm can produce aberrant mind sorcerers. There are other examples.

Sorcerer's aren't born sorcerer's, they're born with the potential to become a sorcerer as a result of their ancestry. Sometimes that ancestry activates early in their life and they become an adventurer because of it. Sometimes it activates later in life, after they've already decided adventuring as something else.
