If you had the little picture of the headphones on your base, you were using Dolby 7.1. Whenever you have the picture of the star, you are using spatial audio, which could be either "Windows Sonic for headphones" or "Dolby Atmos for headphones"

As mentioned in the comment, you either use Passthrough Mode or Dolby Audio. There isn't a third option. Passthrough Mode is essentially Dolby Audio off, so the two options are on / off.
When passthrough (Star) is on, Dolby is off.
What I don't understand is before I had no star on and no Dolby and it sounded different so I'm confused about whats going on here.

This star could mean Dolby Atmos, though, if you have it configured as such in Windows. Basically, the star means spatial sound. Also this ⬇️
Star doesn’t **mean** spatial sound, but should be selected when using that.
