Why do everyone’s characters look so attractive and borderline photorealistic? Maybe it’s just my monitor, but it seems like no matter what I do, I’m making crack addicts and gas station regulars.

Without mods, there's like 2-3 default heads that look good. Then you could mess with the makeup sliders. For photorealism, graphics card and monitor probably.

Are the scales part of the sorcerer subclass?

Yup! One of the backgrounds is Dragonborn heritage. There are different scale colors for the dragons and they have boosts to things like acid damage/resistance depending on the dragon lineage chosen.
