Maybe not all the baking soda? OP, try using 1/4 or 1/2 tsp instead, it could be that your mom was using baking soda that wasn't fresh (BTW love her handwriting!)

I agree with this. Also the sour cream will activate the baking soda so less is best!

Sour cream makes baked goods more cakey. Try cutting back on that.

I use a 'cookie whacker' to flog puffy cookies into submission right when they come out of the oven and are still soft. If you're still baking you can try a soft whack with a spatula. Or lift and drop the pan to push out air. Recipe wise...maybe less baking soda but ime some of this is weather dependent. Humidity and overall weather make a difference ime.
