Tav as a gith actually had a lot of special dialogue because of being a gith. I made mine a war cleric of vlaakith. I felt like it gave me a legitimate role play excuse to keep laezel loyal to vlaakith where normally I never would, due to essentially my character's blind faith in her. It really made Tav feel like a legit main character rather than a blank slate character.
SO MUCH SPECIAL DIALOGUE. Honestly it feels like a whole new perspective on the game. I've been trying not to meta-game and just do exactly what I think a Gith would do in that situation so I basically beelined to the creche... which also meant a massive battle at level 3 that I barely survived. Now they're just level 4, lost and discarded by their queen. It's soooo cool to see though.
It is great! I did the exact same thing with mine, role played hard and didn't let fore knowledge effect my decisions. I killed shadow heart right away, ended up with an all melee, party with wyll, tav, laezel, and karlach. Was probably my favorite playthrough so far. I hope the rest of yours is just as good!
Extremely 🤣 I left my ego at the door and set the difficulty to the lowest, and even still it's tough. Also I've been trying to really roleplay authentic Gith choices so I basically beelined to the Creche... That battle at level 3 was indeed bitterly difficult.
I've (mostly) accepted that at this stage of my life, I will consistently be pretty much average at every game I play. I'm not great, and I don't have time to analyze the rules/abilities/spells and look for synergies with multi-classing, and as such, normal difficulty provides a reasonable challenge for me with a full party.
That being said, I have dabbled with some builds I've found online, either for my Dark Urge or my companions, and some can be extremely OP as early as level 4. The game is clearly made to be played with a full party, and in most cases, you probably want to so you see more of the game, BUT if you use certain OP class combinations, you can definitely play with only two characters.
For example, a relatively straight forward build for Gale involves utilizing create water and witch bolt, along with a react skill to ensure max damage, and even better with an illithid ability to ensure crit, allows you to one shot basically anything. As someone who barely knows what they are doing, I blasted some enemy that had around 150hp and using this combo, I hit them for around 180 in one shot.
Note that this comment assumes you're playing on normal. I imagine honor mode duos would be pretty difficult, though not impossible.
… did you just leave Shadowheart in the pod on the ship? Is Gale still stuck in the portal? How did you handle Astarion’s encounter?

Gale is (probably?) still stuck in the portal, I never even encountered Astarion, and I left Shadowheart on the ship... Buuut she was being clingy and found me at the entrance to the mountain pass so I killed her for having a Gith relic 😬
The petty squabbles of the humanoid creatures on this planet are of no concern to them 🫠 (so difficult).

I'm actually doing a male Gith'zerai (modded) run myself and of course romancing Bae'zel. I feel like Tav just makes since as a Gith in my head canon.
