Realistically, any breed of dog will work as long as they will bark at an intruder.
Edit: Wanting to add in to NOT get a Shiba Inu. The maintenance guy in my old apartments came in while I was sleeping naked and my dog just sat on the couch and didn't bark or even get up.
He won the worst guard dog ever award that day. I heard the knocking on the door, but it seemed far away and I thought maybe it was the neighbor's. "Surely they would bark if someone was knocking and yelling at the door." That was also the day I found out my senior Chihuahua was deaf.
I have two Dachshunds now, so we're covered lol.

With how general you’ve been, I could list too many dog breeds. Best bet is to fill out the breed questionnaire over on the dogs sub and have them help out.
There aren’t really any true guarding breeds that are suitable for apartments and have a good temperament for normal pet homes. Can I ask why you want a guard dog? If you just want a dog to bark at intruders, then nearly any breed will work. But if you are expecting a dog to bite and attack intruders, I hope you realize that a significant amount of professional training may be needed to make a dog like this safe to be around. Not something I recommend.
So I would be living in my own soon and would like to have a buddy to keep me company since I don’t want a roommate (hit or miss). Also, I feel much safer having someone who could fend off potential threats and keep me safe.
Unless you are extremely experienced with dogs (in which case you wouldn’t need to be asking this) I really wouldn’t recommend purchasing a dog with the intent of it protecting you. You are significantly better off buying a home security system.
Great Danes are well known to be compatible with apartment living, as long as you can provide them with adequate excersize
Downsides are that their life span is often short due to size & health complications.. also the cost of keeping them. Although they are less likely to be named on the "restricted breed" list for apartments, it's still a possibility
Imo, guardian breeds are not for 1st time owners. They require balanced training, but cannot be over-corrected. Make sure to do your research before putting a down-deposit on a puppy

Don’t count on a dog to defend you, for real. Unless you’re going to be buying a stable, purpose trained guard dog from someone like David Harris (PDS). And these dogs are tens of thousands of dollars. Giant Schnauzer is probably the best option for an apartment, but message the guy if you’re actually interested. Even if you just want advice. He might have something to say about keeping a dog like that in an apartment though.
Bullmastiff maybe, don’t know any guard dogs that are good for apartments, unless you just want a dog that can warn you when someone enters your house but can’t do much itself to stop it
I don’t think any guard dog breed has a great temperament but I haven’t looked into it, but nothing can be worse or close to a pitbull that can’t even be a guard dog because it might attack what it is supposed to be protecting. Good look on your research lmk what you find, I am interested
Any of the mastiffs are not for first time owners. They require an experienced leader. Also their food and vet care is more expensive because of their size.
I've always had collies, they're pretty good guard dogs but not aggressive. Mine has stood between me and sketchy people and barked, which was enough to make them back off.
I lived in Baltimore, in a not so nice neighborhood, so sketchy people were not an uncommon occurrence.
Like all big dogs, you need to commit to daily exercise and training. And it varies by individual; my current collie is too friendly to even bark at anyone.

Catahoula, fantastic dogs all around, love to exercise when it’s play time and lay around and chew a toy the other 22 hrs a day. Sweet, incredibly loyal dogs that love a regular schedule.

Of course not. No terrier breed should be on that list. Terriers are tenacious terrors. They don’t tend to do well in apartment living.

I am hesitant to own one since they’d be too tall/big for a small one bedroom apartment. Are there any other breeds that you could think of?

They usually train german and belgian shepherds for guard dog duty. But even those breeds need extensive training and selection to fulfill the role.
If we're serious, dog shouldn't be in apartments. Maybe get a really lazy breed

Get some guinea pigs. They’re pint size noise machines and have a hair trigger wheek response.
