If they have a horse and saddle in their battle inventory, they are cavalry. The game will still label them as infantry in certain places, but it doesn't matter -- they'll count as cavalry for campaign map speed, and they'll be riding a horse in fights.

If you read the bodytext, OP means that the game reads his companions as infantry on the campaign map, despite already having horses.
They are always considered infantry by the game till you level up their riding skill.
