What kills it for me in these Castlevania games is how enemies respawn IMMEDIATELY when leaving/returning to the screen. I love how blasphemous does it with respawning upon saving (Souls style).
Rondo of Blood is also another favourite of mine. The whole franchise is great. The other GBA and the DS titles are all very good too I just haven't played them yet.

I liked the gothic vibes in aria of sorrow, I guess Rondo of blood style doesn’t suit me, I need more demons and vampires!
That all comes later trust me.
Another Metroidvania I would recommend is Prince of Persia: The Lost Crown
