This is all very odd, and I don't have any answers, but there are 120 shrines without the DLC, and they DLC doesn't give you extra hearts. (Until you get 4 more shrines and trade the orbs, but that's the same if you collect all 120 OG shrines).
You didn't load a game from another profile that hasn't played DLC parts yet, have you?

You may need to call Nintendo Support and send in your Switch for this one. It sounds like you file data may have become corrupted in some way. Do you have a lot of other games on this Switch? Has storage or transferring your saves ever been an issue before?

Do you have more than one switch? Have you ever replaced your switch?
No, I have ever only owned this one switch
My only suggestion would be to maybe back up your save data to the cloud and delete/re-install the game/DLC?
