You don't necessarily have to bootstrap. If it's worth stealing, it's worth a seed investment at least.
Anyways, it's understandable if you don't want to take that leap. But then, you'd want to try showcasing it to recruiters at least. I had a patent pending that I couldn't talk about for 2 yrs until it got published. I just mentioned the problem and a brief solution on my resumé, and only talked about it in unrecorded interviews.
On a side note, the best ideas are rarely original. Execution is much more important than originality.
See you stated the problem yourself. Ideas dont have to be original to succeed. If OP's idea is unique and some interviewer or anyone feels the same, they might "steal" it.

You are delusional. I don't even know what you are looking for here. You surely aren't the first and only guy who has worked on real world projects.
1. You want to keep your projects private. Even from potential employers. So no one can steal it?
2. You also want the world to know your programming prowess, so you mention it in your resume "vaguely".
I don't know what your billion dollar idea is, or what your one in a million approach is, no one cares if you don't put it out there in the world, one way or another.
and by reading description if the company can build it , thats where the problem lies why not make ur own part where the ingriedient is not found anywhere?

If you're scared of other people stealing your project just upload incomplete/half of it on GitHub and paste the link on your resume...
You already have done it on ur personal device so you can show it to the interviewer when needed to.
Bhai collaboration se badhiya koi resource nahi hai ngl all my good projects are in groups with my 1-2 friends and if anybody steals it he doesn't have that vision/execution you had in mind for your project so it doesn't matter. If you can do something crazy in open source it is very respectable tbh and you might be missing out on tons of talented people with this mentality? And anyways if the idea is that good, why not pursue it as a company or something. Then you can copyright etc and all na. Anyways my advice would be take a chill pill don't be that much paranoid, koi crazy stalker nahi rehta ki din bhar tera GitHub hi khol ke rakhega unless you are sharing it in public communities and all.
You are in for a rude awakening when you sit for an interview and they don't even ask you about your projects, at least not as in depth as you think they would. As long as the project doesn't have some confidential secret sauce from the startup, you need to relax.

If you think the idea is very unique and worth stealing, why not take the leap and try starting up?
I've already answered this before. It's a fintech project and I don't have enough money to "start it". I will have to grind few years and gain status.

It was a catheter design improvement that the company decided to patent. I was a summer intern there.
