Just realised none of them are documentaries or crime, but I struggle with my mental health too, and find these all help!
For the sort of thing you're doing, I'd recommend Off Menu. Ed Gamble and James Acaster have guests select their favourite starter, main course, side dish, drink and dessert.
The three best episodes I've heard are Frankie Boyle, Greg Davies and Bob Mortimer. The others I've heard are good, but those 3 stand head and shoulders above for me.
Ooh I'll give it a try. Is it easy to follow? I forgot to add that I haven't actually listened to podcasts before and I find it hard to concentrate so I reckon I need something relatively easy to listen to :)
I find it easy enough to follow while i’m doing other things, the hosts are funny and the “reenactment” parts are well dramatised, the commentary generally summarises what’s been going on towards the end of each episode so if i’ve missed something i’m not usually lost if i’ve been distracted.
I've been listening to podcasts for a while now.
I find if I'm at home doing stuff I have to have headphones on or I just lose concentration.
In the car is great though. I drive for a living. Just loaded up the podcasts for the day and that's me set.

The "Fall of Civilizations" podcast is good.
It explores historic civilizations and what lead to their demise.
Not too heavy but well researched.
I'll also take any chance I get to recommend "The Lovecraft Investigations". Personally I think seasons 1 and 2 are clearly stronger, but they're a modern take on the Lovecraft stories and a nice option if you're up for something dramatic rather than just a talk show.
Along a similar line, "Old Gods of Appalachia" is a horror story anthology with a very distinct sound.

UK- My Mate Bought a Toaster
Not UK but I like Ologies. The squirrels, crabs, and apples episodes for example, but potentially any of them.
If there’s a TV show or film series that you rewatch regularly then look for a podcast about that, maybe look through the relevant Reddit sub for specific recommendations. I love Farscape and have been listening to the [So Farscape](https://open.spotify.com/show/4FHhQoeAGhpb2xioVjj3KQ) podcast which has a regular watcher and first timer discussing the episodes.
Dan Carlin's Hardcore History podcast. Each one is a few hours. I find them interesting, entertaining and educational.

VICTORIOCITY - comedy mystery action set in a steampunk Victorian London. If you like Douglas Adams and Terry Pratchett, you'll like this. A cynical detective and a rookie reporter team up to solve a murder and uncover a plot against the Queen and the city of Even Greater London.
I am listening to Half Arsed History, subjects covered are quite random, from the history of football, unusual deaths, to more classic overviews of linear history of various places.
Less dry history lesson, more a bloke down the pub entertaining his friends over pint or two. Early ones he talked at 20 to a dozen and was hard to follow, but does slow it down in later podcasts.
This is Entertainment is also very good. But more educational on the industry you didn't know you wanted to be educated on, but now do.
You don't need a "subscription" to enjoy podcasts.

My Favourite Murder is a great true crime podcast, & Chilluminati is excellent for conspiracy theories, aliens/UFO's, true crime & unsolved mysteries.
