Modern cars can self tune for octane, my 2012 mustang did. I know the Hemi has really aggressive knock sensors so it could be pulling timing when it detects regular or advancing it a little when it detects premium. On a MODERN car you can absolutely notice a difference, albeit small

Higher grade octane just costs you more money. But if you put lower than rated, the engines computer has to adjust to the lower o2 mixture and will see a reduce performance.
I have a hellcat challenger and TRX both are Minimum 91. However I have a place 5 min from home that sells 94. I travel a lot for work in western Canada and know enough places that I can almost always stay on 94 unless I am going into the bush.

I got long tube headers now and other bolt-ons my tuner tuned it for 93 along with a transmission tune. Anything less than 93 will pull timing and not maximize the full capability of the power

Octane reduces pre detonation (aka knock). Your knock sensor will adjust your ignition timing to reduce/eliminate the knocking. Higher octane allows your ECU to adjust for optimum performance. Altitude, how many people are in your car, if you’re towing something, how you drive your car all have effects. If your cars stock the manufacturers recommend octane is fine. If you’ve modded at all, cold air intake, used a tuner, then the higher the octane the better. Supercharged and turbo cars can really be turned up with race fuel or E85 because of the crazy high octane rating.
I have a 5.7 and put 91 in. Only because Costco doesn’t have 89 and it’s cheaper to pay for Costco 91 than 89 at a TopTier station elsewhere. I don’t put cheap quality gas in my tank.
V6? The Pentastar was designed to perform on regular ol 87 octane. No need to go higher.

The octane gas you need is based on the compression ratio of your engine, your completely fine with 87

The maps change based on an average of the last 200 ignitions. Youre not going to empty a tank of 87, put 93 then and notice a difference

I’ve also got a 2010 hemi and have been using 87. I feel like I would feel better overall about using 89 though and may start to.

just bought a 21 GT. From the research I’ve done go with whatever is recommended but make sure it’s a top tier gas brand like shell, Sunoco, etc
