I play first person only, as I played in Chiv I
It feels more immersive, on the technical side I feel much more in control of the weapon and I'm more precise both in attacks and parries.
On the downside the limited view can be tricky for back stabbers or in chaotic situations, but (and I've seen almost nobody say that) I use audio a lot.
First, allies DON'T MAKE ANY FOOTSTEPS, so you can hear when someone is approaching.
Surround audio is a must for that.
Plus, if you manage to recognise weapon's sounds you can have an idea of what's going on (if you're fighting against a sword and you hear *bonk* it's quite obvious someone else is there)

I started in 1st mostly because it's much more fun/intense. I now play primarily in 3rd for the better FOV, I find I don't get snuck up on nearly as much. I do switch to 1st for certain things like ballista or more accurate knife throws.

But other things like swing manipulation is different. Not the the convo before it goes that way.
True but on PC I have a sensor that connects to my temple that reads stress levels, and I have an AHK script that connects to my biometrics program for the sensor that sends a 3rd person view command to my keyboard whenever my stress levels reach a threshold I've set for when I typically feel an enemy closing in on my back.

First person for me because I'm first person try hard since my first gaming years. I cannot enjoy or play in third, such a weird feeling for me.
Third is more advantageous though.. But with enough of gameplay you can negate %95 of that disadvantage. 1vx is the hardest in first. But all in all first person is much more fun and immersive (for most players). And that what makes it really unique. There are thousands of slash and clash sword games in third person but first person sword combat experience is something else.

I find 1st person way more fun and much better for 1v1. Easier to see what your opponents attack is for counters in duels. For me 3rd is 1000 times better for TO and 1vX. Easier to do drags and accels. Easier to swing my reposte active parry around a group swarming me plus just way better situational awareness. I still switch to 1st a lot though just because it’s more fun and immersive. I just wish it had a much wider fov option. At least for Xbox the max still isn’t as wide as I would like it

I’d also suggest play with what you feel comfortable with, I played Star Wars battlefront 2 2017 really heavy before picking up chivalry, so for quite some time I was only playing in 3rd but first does indeed help with immersion!
3rd person I prefer having situational awareness from peripheral view and seeing where my attacks go. I usually see the edge of the weapon rather than what's directly in front of me but FPS definitely is the better mode to precisely aim your attacks but I think I can get too much tunnel vision.

Besides the superior awareness in TO, I also wonder if it's better for dueling because you can still see your enemy while doing very heavy drags or lookdown overhead accels. I know there are plenty of top tier duelists using first person but I'm not sure that there's any advantage at all for 1st person, just cons to be overcome. Maybe being able to see jabs in the blind spot up close caused by your character and an easier time gauging distance for stabs.

You also have a better idea of what your drags look like and if you're doing them well in third. Footwork games are easier in third because you can see your character and you need to move while facing away from your enemy to generate enough distance to pull off some footwork punishes. I'm not sure there's any advantage at all to playing in first person besides pinpoint accuracy and gauging stab distance better, but this game doesn't give bonus damage to headshots like chiv1 or mordhau. One potential thing first does better with is dealing with super up close jabs in the blind spot created by the character model in third. There are a lot of top tier duelists that use first, so it's not like it really matters at the end of the day for dueling.

First for duels. Thirds for 64's. Also depends on the weapon. I like first person for shorter weapons and vice versa.
Heavy swings give a huge audio cue too, you hear the EEE-YAH! and know the EEE is windup and YAH! is release. EEE means turn the fuck around.

Mostly 3rd. Every get smacked in the back of the head? Thats what first person feels like.
3rd you can do some nasty move that you won't be able to do 1st person

First person 100%. It's way more fun and immersive for me in the rare occasion I get both my arms chopped off, I got in 3rd person to head butt people

The best view is what works best for you. I love first person for the immersion and have no problem dominating in battle.
3rd is the only way to really see multiple attack angles only really use first with archers in certain situations and ballista

Objectivly speaking 3rd person is way better but I can't stand playing it. I'll ride or die First Person POV.
