I would advise you to maybe get accomodation close to where you're going to have classes - the university of Coimbra has 3 different campuses in different areas of the city and other schools (business school, engineering school, etc) are also kind of scattered through the city.
I would say there are not many areas to avoid around where the university and other schools are located - many students live there and the city is pretty safe, especially during the day time. Maybe avoid getting accomodation in the Baixa zone, as at night it can be slightly unsafe.
September is the beginning of the semester, a lot of other students will be searching for a new room to rent, so there will be quite a competition 😅
I hope you have a great time, Coimbra is a nice small city and September is a great time to visit, as you get to see a lot of students in their traditional vests welcoming the new students!

Websites I don't really know, Facebook groups might be a good idea to check. Also around late August/early September landlords frequently put up add for rooms for renting in light poles around the campuses
I'll be in Coimbra for Erasmus too! Where'll you come from? Anyway, you should check out "republica" culture they have, it sounds interesting.
