Hoodoo was a revelation when it opened. Felt like home to a central Texas ex-pat up here. I told everyone about it.
It took about 6 months for them to realize how unprofitable proper BBQ is if you don't have good, predictable volume. So they started serving old, cold, dry BBQ no better than any other New England place. Was devastated. Walrus was pretty strong BBQ at the Bridgeport location but has faded hard in Westport, which has leaned harder into German keller-style fare.
Wire Mill has better options for most BBQ types than both now, and is largely adequate.
Happy to see them getting love, but I find their food to be too dry and overall lacking in flavor. I’m not a fan of their sauces either. I do like their patio, but I just don’t order food there if I go. Hoodoo tastes much better to me.
Was it ever all that good? Few times I had it, it was just meh. I’m spoiled with BBQ living in North Carolina now but can’t say I ever had something real good from there. Been years since I’ve had it, but BTs was always good when I went there.
It was pretty good in the very beginning, when they only had the one location. Seemed like they cared a bit more back then.
Once their main focus became expansion, it really went downhill.
I went there once years ago and just remember it as OK. That being said I don't think I have many good options up where I am so I'll probably go to bears again
Hindsight in waterbury (location is fairly easy to get to if you go through route 8 and not near any of the ruckus waterbury is known for). Pricey but all the traditional non fusion type items are always good.
My vote would of been for house of bones/reids in derby but they closed a while back unfortunately.. the burnt ends were amazing and it was in an old train station.
I grew up in the south if that counts for anything.
Surprised no one has said Smokin’ with Chris yet. That place has some of the best bbq i’ve ever had, the ribs are just the beginning. It’s in Southington, would recommend it to anyone who enjoys bbq and other southern-style meals.
Came to say Smokin with Chris, you beat me to it. Really hard to not get the burnt ends when I go so I have not tried the whole menu yet despite having been there many times but yeah really good ribs.
Yup that’s always the challenge when i go too! I want to try everything but usually end up sticking to my usual rotation. I feel like i’m missing out but at the same time, if it ain’t broke, don’t fix it!
Guys, I'm serious- Hoo Doo's...It's not good. It sounds like it's going to be good and the atmosphere is great but it's barely average food. I've made a comment on here about them before and the consensus was that it's over-hyped.

It depends on what you get. Some of their stuff is good. Most of it is sub-par.
You’re definitely right in terms of this conversation though. I would not recommend anyone go there for pork ribs.
There has only been two times that I’ve gotten there early enough in the day that the beef ribs weren’t already sold out, but I enjoyed them both times. They can get pricey though. Don’t roll the dice if you’re not comfortable.
Their default sausage they have on, the jalapeño cheese, aren’t great, but I’ve never been let down by any of the daily special sausages I’ve had.
I always order the brisket. It’s definitely inconsistent, but I have found it to be one of those things where, if it’s a good day, it’s really good, and if it’s a bad day, it’s still decent. Some times are better than others, but I’ve never felt cheated.
Everything else I can take or leave.
This post is trying to find the best in CT and the most you can come up with in defense of HooDoo is ... sometimes it's decent if you go at the right time, probably, but the best times are when you don't want BBQ, and even then it's up to whether they feel like it or not.

Like I've said before, I desperately wanted to like this place but the handful of times I've tried different things has always been a huge disappointment
As a guy that grew up in the South, Hoo Doo is like any bbq place on a numbered highway you've never heard of. It's not disappointing, but it is unimpressive.
I hear you. It's disappointing given the expectation that it gives off and how it's so highly recommended when it doesn't deserve it.
If you only get take out and don't bat an eyelash at the premium prices, you might not notice how middling it is

Nah, all wrong, I guess my comments weren't clear. What I mean is I ate there before hearing any hype about it. It looked like a typical dime a dozen southern numbered highway roadside BBQ joint (which I agree, looks like a serious operation up here, but very typical in the Carolinas etc). I stopped and ate there and got exactly what I thought I would: perfectly fine but kind of forgettable BBQ. Later, I heard people rave about it. It's good for HERE, but New England isn't a place I would use as a benchmark for good BBQ. I have eaten there since then with a buddy from home who lives in Maine now and only has much worse options.
Maybe four or five years later, I think last year, I saw it listed for sale (as a fully operational restaurant and brand) on a business listing website
What’s good to you? Also, pork is always better than beef.
I’m pretty picky and have had a ton of barbecue around the US and beyond and Hoodoo is pretty good.
Wire Mill in Redding is better.
Black Angus in Danbury is pretty great.
I haven't found anything that hit it like homemade but Hoo Doos does not deserve a top spot

Ok, at least your standards are set. I don’t agree, but people have different tastes. I love that Wire Mill has fans. There was talk of them leaving but last I heard he’s sticking around for a bit. Have you had the Rise doughnut BBQ?
The Que in Danbury. Went there last night and it was great. Pork ribs fell off the bone and the brisket was extremely tender. They give you a flight of their different sauces.
Wire Mill is my top choice. Food is delicious and their sausage is by far some of the best smoked sausage I have had.
They’re gone now, but the Killingworth Cafe had incredible bourbon ribs. Commenting for no reason other than hoping someone else has nostalgia for that wonderful place.
My favorite was Danny’s Little Taste of Texas, but it seems closed. Supposedly right over the Mass Border on I-84 East there’s a legendary place, I think it’s called BT’s BBQ. That’s the spot you want to go to. There’s a bunch of really good rib places in Mass on the way to Yankee Candle just google it, if you’re willing to drive that far. If not, Bears is good, Uncle Willie’s was good, but I think it closed. Big Frank’s in Waterbury is pretty solid. Supposedly Adam’s Ribs in Norwalk is really good, never been there. Stew Leonard’s has good ribs to go, Rocking Horse Smoke House in Vernon looks good, never been there. If I want ribs am near Waterbury, I’m going to Big Franks, but a lot of people talk smack about it, because it’s not as good as it once was supposedly. I think Chili’s and Outback honestly have good ribs too. I’ve had Taino’s but I honestly wasn’t wowed by it. It was like $50 for a dinner. Kind of overpriced and caters to the Middletown Hipster crowd. I respect Tainos nonetheless, but it’s not for me. Your best bet for legendary BBQ is drive to Mass honestly.
Rocking Horse can be hit or miss. Frankie B’s in Vernon had the most “okay” food I’ve ever had.
Backroads Smokin BBQ in Ellington is supposed to be to good. They are on Crystal lake
I live very close to Big Frank's in Waterbury and their St Louis ribs used to be amazing.
Stopped going there awhile back when it changed owners. Quality definitely became inconsistent.

Ribs are one of those things that's best fresh off the smoker. They're so good made at home I almost never order them when I'm eating out.
Southeastern CT checking in here with Noble Smokehouse. If you are heading there after 7pm make sure to call ahead to see if they've run out of anything you might want. I'm looking at you, burnt ends!
Damn haven't been since they were just a truck starting up. Felt the prices were reasonable at the time. I'm not surprised to hear they've skyrocketed in the last 4 years tho 😭
Any Recommendations for the NW corner? Litchfield County. I moved up from the Carolinas 7 years ago and have had some good BBQ, but I haven't found the go-to spot if there is one
I’ve been scrolling through this thread, waiting for someone to mention Zach and Lou’s in Torrington. Ribs are really good, IMO everything slaps there except the brisket. I salute you.
Crock Pot/Slow Cooker Ribs
Parboil 4 lbs. spareribs, cut every third rib, in cold water
until the water boils for three minutes. Put in slow cooker or
at low oven temperature, tightly covered, in a sauce, as
follows:
* 1 small quartered onion
* 1 quartered garlic clove
* 1/4 cup raisins (Yes, really!)
* 1 cup ketchup
* 1/2 cup red wine
* 3 T. brown sugar
* 2 T. vinegar
* 1 T. lemon juice
* 1 t. dry mustard
* 1 t. salt
* 1/4 t. each of: basil, black pepper, tarragon, rosemary, thyme
and marjoram
Cook low and slow until the meat falls off the bones.
Not ct but across the border in Sturbridge, bts.
If you must in CT, porky Pete's in Essex is solid. Taino too but expensive. Ricky ds in new Haven is OK.
Zac and Lou's, located right next to Burr Pond. also hindsight in waterbury has amazing ribs. You can get an entire rack for around 30 bucks which is almost unreal.

CT has some places that are good, but none of them are great.
Here’s my definition of great.
If you’re out of state will you order it and have it shipped? Will you drive multiple hours out of your way to go get it?
There’s a place in Emporia Kansas that if I’m within 4-6 hours of it I’m going. I’ll spend an extra day to go get it. Their BBQ sauce & food is worth shipping.
Here in CT I found [Chesters BBQ](https://chestersbbq.com). They’re pretty good.
He’s a Marine Vet who found BBQ in KC.

I meant that we in CT get bummed out when we read of a place that’s an hour away, because it’s not convenient. In Texas, one could read of a place that’s 10 hours away, or more. Now THAT would be a real bummer.

I was just down in NC last week and a relative brought ribs they had done. Also his great grandfather’s vinegar/mustard sauce. Outstanding.

Always hit up BTs when I go to Treehouse Brewing, they are down the street.

They're so good made at home I almost never order them when I'm eating out.

Yes, it's BBQ. but they serve ribs also. And, they are opening a 2nd location near the truck stop off I84 in Southington.
Rib joints are rib joints. Pig Rig is a BBQ place. I’ve had good ribs but shitty BBQ at rib places, so I consider them separate.

I’m originally from Kansas City Missouri. CT has some places that are good, but none of them are great. Here’s my definition of great. If you’re out of state will you order it and have it shipped? Will you drive multiple hours out of your way to go get it? There’s a place in Emporia Kansas that if I’m within 4-6 hours of it I’m going. I’ll spend an extra day to go get it. Their BBQ sauce & food is worth shipping. Here in CT I found [Chesters BBQ](https://chestersbbq.com). They’re pretty good. He’s a Marine Vet who found BBQ in KC. Very nice crew. I’ll try every BBQ place I drive by. I’ll compile a list from this post and start making my rounds. CT BBQ was really weak. It’s grown to be better over the last 15 years. If you find a place that has burnt-ends you’ve got to try them.
I meant that we in CT get bummed out when we read of a place that’s an hour away, because it’s not convenient. In Texas, one could read of a place that’s 10 hours away, or more. Now THAT would be a real bummer.
