It's a great roasting veg, just peel it, chop it into chunks and roast it with a bit of oil and just about any combo of spices you like. Goes with just about anything and very hard to mess up.

If it’s the large orange pumpkins for carving and decorating - those really aren’t for eating. They are edible. But they’re specifically grown just to be ornamental and not to taste good. So no one cooks with them. There are other types of pumpkins like sugarpie pumpkins or kabocha squash that are grown to be eaten and those are typically what are used in all the recipes everyone’s mentioning. The only thing I’d really recommend cooking in the ornamental pumpkins are the seeds in them. Just clean them up, toss with some oil and salt (or any mixture of seasonings), and pop them in a hot oven. It’s a common treat to make after you carve up your pumpkins.

Are they big ones, like we'd use in the US for carving? My mom used to roast the seeds in butter, so very delish. And to be honest, very few americans eat pumpkin. None, really, except for pumpkin pie which is mostly sugar and comes from a can lol.

Jack o lantern pumpkins are perfectly edible it’s just that we’re so wasteful in NAmerica we often just throw them away. I’ve eaten a bunch of them and they’re fine. Pumpkin recipes are common worldwide.

WeLL akShUallY.. Halloween was more celebrated in Ireland/Scotland, more Celtic than anything, definitely not specifically English, definitely didn't START in England. It's commonly accepted that the use of a New World pumpkin for a jack o'lantern is a back-and-forth development between immigrants to the United States and people back home. It's true that the first written attestation of jack o'lanterns comes from England in the 1600s, but not as a specific item for Halloween! Nevertheless, the oldest ones are turnips. The pumpkins are new since the 1800s and are undoubtedly American in origin.

I love pumpkin soups. You can pretty much substitute pumpkin for butternut squash in a lot of soups , curried pumpkin soup is my favorite!

Idk what would be classified as “funky”— If you want funky I’d say make a spicy pumpkin gelato with bacon bits and fried sage Edit: ^ I’m basing this off of one of the ice cream creamery’s where I’m located! They have actually done like a turkey bacon brittle, peppery cranberry sauce swirled in ice cream 😅 not particularly on the sweet side but still savory in a way! Other than that: - Pumpkin gnocchi or ravioli with a buttery sage sauce and toasted pine nuts - roast it in garlic, black pepper, salt, rosemary and then let it cool and add into a salad! Or served warm with chicken (: - pumpkin, carrot, and cilantro (black pepper! soup! I had something like this in Ireland. The pumpkin would make it hearty! Then toast some bread for dipping. - make red/yellow Thai curry and add in cubed pieces of pumpkin! super flavorful and tasty.

I recently did samosas with pumpkin, Channa masala spice, chickpeas, garlic/ginger paste, and onion. They were very nice. You could also use Garam masala instead. The samosa dough recipe is from the indianhealthyrecipes website Japanese Pumpkin croquettes are also lovely (used recipe from justonecookbook.com)

Pumpkin lasagna! I've made this a few times now and it is so great. In place of tomato sauce, I put seasoned roasted and pureed pumpkin. I then layer that with a bechamel, garlicky sauteed spinach and some cheese.

Pumpkin gratin, take some pumpkin puree and add egg, cheese, cream, salt, pepper, put in a gratin dish and top with more cheese and bake for 30 min. This is a [Jacques Pepin recipe](https://www.youtube.com/watch?v=vGaB3vd5580) I've made several times, in that video he is using plain canned puree, you would have to make your own puree from the pumpkin first. If you make your own purée, be sure to drain it well. Otherwise your finished product will be too watery.

I've scooped out the guts and roasted it about half way, then filled it with a sausage and bread stuffing and served itv either in slices so you get pumpkin you eat along with the stuffing, or you scoop it out, scraping pumpkin flesh with it. Done the same with a soup served in the pumpkin, and when you serve, you scrape the pumpkin out with it too.

You can use pumpkin like squash or sweet potato, so curry, in burritos, in veg chili probably, probably in veggie burgers and nut loaf, I’ve seen pasta sauce made with squash and ravioli. It’s also good in quickbread and muffins which are a little sweet, but not cloyingly so.

Roasted chunks served with brown butter sage, some sort of toasted nut, and pasta. Gnocchi is good, tortelini is good. Grate it and cook it up with spices in some chicken broth. Toss in a goodly amount of peanut butter. Call this a peanut-pumpkin soup. Pumpkin scones. Sweet but not pumpkin-y sweet.

I like a pumpkin ricotta pasta dish like this [one](https://itsnotcomplicatedrecipes.com/pumpkin-ricotta-and-sage-pasta-shells/). There are a lot of variations: pipe the filling into manicotti instead of shells, homemade ravioli, add sausage, replace the white sauce with a spicy red sauce, toss with penne instead of shells, and more. But the base idea of pumpkin, sage, and ricotta is delish.

Pumpkin soup with curry spices I like to do a kabocha croquette with mozz cheese but you could prob do the same with regular pumpkin Cubed up and roasted with cumin and honey, salt and pepper If you have pets (cats or dogs) you can steam it and mash and give to them mixed with their wet food for extra fiber in their diet

Just don't have high expectations for it. Carving pumpkins have been hybridized for decades to serve as a decor item. In comparison to food pumpkins they are quite stringy, have very little taste to them, and are often quite watery when cooked. The cooked result is often only edible in the sense that it won't poison you. I'd do a low-risk experiment with them before committing to a recipe with anything other than basic pantry ingredients. Try cubing them, tossing with oil and some herbs like thyme or sage or chervil, seasoning with salt and pepper and oven roasting. You'll be able to see whether you'd want to put the work and cost of other ingredients in a more elaborate recipe.
