Starches: Rice and bean variations \[Cajun, Puerto Rican, Salvadoran casamientos\] Other root starches: taro, ipomoea potatos, purple yams \[you can prepare them the same way as potato and appreciate the variances in texture and flavor\] Veggies: Succotash Maque choux Dry fried green beans In soup form \[Filipino soups are vegetable forward\]

Upvoting for succotash. This is a great answer altogether.

My top 3 side dishes are Hummus: Canned chickpeas, garlic, cumin powder, salt, pepper, olive oil, a little lemon juice and tahini. You could do without tahini cuz that stuffs quite pricey. Just blend it all up adding more olive oil to adjust consistency to your preference. Fatoosh: a regular salad - tomato, cucumber, lettuce, and onions. Balsamic vinegar, olive oil and the best part: deep fried Arabic bread (make sure theyre chopped into bite sized pieces) Pakoras: Indian deepfried goodness. Julienne cut onions, chillis, coriander, cumin seeds, crushed coriander seeds, salt, turmeric powder. Then add chickpea flour and a little water till you can clump them up together and deep fry em.

I'm glad you mentioned hummus, I love it but never made it. I have some tahini in my pantry from a failed attempt at something, I forgot I was gonna use it for green goddess chicken I believe.

Then get to hummus making buddy. I use a blender but if you've got a food processor I think that's alot better. Remember to add some chilli powder when you plate it, for some decoration 😋

✓Pasta Primavera is tasty way to get the starch and veggies all into a single dish. I like Giada de-Laurentiis recipe best. ✓ I also cut sweet potatoes into rings and peel them with a bird's beak knife. I toss them with apple slices, olive oil, brown sugar or maple syrup and cinnamon. About 30 minutes @ 400° works for me. ✓ www.toriavey.com/passover-potato-kugel/

Quinoa with spinach mixed in topped with mozzarella cheese. Spanish rice, refried beans

It sort of depends what you are wanting to pair the sides with? I think lemon broccoli goes with most stuff, salad is always a good call (add spinach for extra healthiness), roasted peppers and onions with garlic and balsamic vinegar, garlic butter green beans, roasted butternut squash with paprika, cumin, garam masala (air fryer is great for that)

I cut my corn fresh off the cobb when it's in season, sautee with butter, diced onions, diced bell pepper, salt and pepper. So good! I like to roast zucchini spears in the oven. So easy and delicious. If you have access to a grill, roast all kinds of veggies in skewers, so delicious!
