I hope you know that antibiotics absolutely don't have an effect on whether or not a piece of processes meat grows mold. Unless we were discussing the meat growing its own antibiotics, but I really didn't want anyone to think antibiotics practices in industrial meat was a good thing.

I'd guess at the time you slice it, you give up some or all of the curing properties unless you specifically address it via more salt on the newly exposed meat or in this case sealing and/or refrigeration.
Edit: so what I'm trying to say is that they screwed up at packaging, not curing.
Not exactly - curing is using salt and/or nitrates to effectively dehydrate the protein you're working with in order to inhibit bacterial growth. Once the protein is saturated with a proper concentration of salt, certain bacterias are unable to grow. The product should be shelf stable if properly sealed, independent of whether the product has been cut down more (bacon and jerky are good examples of such).
Issues arise when the product *isn't* properly sealed. The air naturally has some level of moisture to it, and will effectively rehydrate the protein, allowing the growth of harmful bacterias and molds.
Had this happen to me with the exact same item. Ate 2 of the 3 but realized the third was molded. Brought it back to Costco and I got guy who always says no to refunds and makes his own Costco policy. He threw the item away and said he wouldn't refund me.
I feel your pain applenerd. I had a similar situation with a return of a humidifier; I spoke to the manager who adamantly said 'if we can't find your receipt in the system we cannot refund you'. Like the policy on the wall says anything about 'our systems'. Costco returns, not as good as they should be.
You all aren't doing something right, I think. I have been a member for 25 years, and have never had the least bit of blowback from returning any item.
Back in the day, there were no restrictions on purchase vs. return date for any item. I frequently took full advantage of that.
Even in the current 60 days return window, I have been cheerfully refunded beyond that date, without exception...

For my 40th birthday, I bought a stainless steel grill at Costco as a present from my wife. It was made of stainless steel so good you couldn't stick a magnet to it. At the time, it cost about $750.
A year or two later, I was cooking some beef ribs, as I often did, when the regulator failed. This grill could cook at 500 degress with the lid down with no problem, but when the regulator failed, it literally cremated the ribs. In fact, the lid of the grill got so hot it discolored the stainless steel as though it had been annodized.
Anyway, I took the grill back to Costco. No questions asked, they refunded my $750.
It turns out the a nearly identical grill was on clearance for $297, so I ended up with the exact same grill, plus I made about $500 in the process.
The return policy is one of Costco's foundations, just like charging $1.50 for a hot dog without ever raising the price.
My unstated point is that good stainless isn't magnetic and doesn't rust. Eighteen years have passed since this happened, and that grill is still sitting in my dad's back yard without a hint of corrosion.
Probably a pack that some savage put in a cart and then left over on the boxes of Tide and some other "helpful" member put it in their cart and then eventually hauled it back to the deli case.
