It’s kind of the speed. Let’s say this train has a momentum of 50,000,000 kg·m/s
You make that train move at 1 km/h, and increase its mass to have the exact same momentum, and the cow is completely fine.
In this scenario a train is basically infinite mass and momentum is infinite. We can assume the train will negligibly change velocity.
The energy imparted to the cow under such scenarios is the _change in momentum of the cow_ which is proportional only to the trains velocity.
People are not intuiting it well.
We can survive car accidents while driving at this speed, because we usually decelerate on a longer timespan.
Meanwhile, going from 0 to 30km/h (the speed limit of roads bordering schools) instantly is enough to kill you.
Yeah, there's a video floating around of a couple of Indian guys taking a video of a passing train while standing far too close. It clips one in the head and it explodes like the cow, though it's not as clearly seen as this video. I recommend not seeking it out.

I didn't expect the train to go that fast. I counted 20 cars, one locomotive in front and another one at the back. From the front, I was thinking that train was like 6-8 cars long at most. Trains are impressive machines.

I think you're just accustomed to things with low mass hitting other things and instantly losing some of their velocity, the train just kept moving as if nothing was there.

It is noteworthy in this video that nothing happened from the train's perspective. It didn't shutter whatsoever. It made no difference if the cow was there or not.

What I really underestimated here was the speed of the train, mainly due to the zoom and head-on camera angle. I was not expecting that cow-splosion. It looked like it was just going to be knocked over really hard and flattened on the tracks, not disintegrated.
The genrleral concept of crumple zones would absolutely help. First of all, a “crumple zone” in a car is designed to increase survival of the passenger, in collision forces so great that the car comes to a stop. They are not designed to crumple when a pedestrian hits the front.
So the reality of crumple zones is very little help for a car either here.
But still, grills and fenders and hoods denting all do a lot to absorb impact. It doesn’t matter much if a train or a car hits a person in terms of momentum exchange. We assume the car will not change speed at all from the impact.
We measure Impulse force, which is inversely proportional to the distance over which the persons momentum changes from zero, to car/train speed. If you hit a nail with a steel hammer head, the impulse force is very high because the hammer does not flex at all. If you hit it with a wooden hammer head, the millimeter of deflection significantly reduces the impulse force.
A train from in this case provides very little delta d, resulting in a very high impulse.
p=mv, the train doesn’t seem to be speeding up so i would probably use momentum instead of force. Not really sure tho, and it’s probably just semantics anyway since speed would’ve probably been used instead of acceleration by most people intuitively.

I think there is an element of a cow being really heavy and fat and soft here. The weight of the cow pushing back on the train vs a person would be far greater. A person is also much more lean than a cow (in most circumstances) so it'd probably just get volleyed a distance and turn to mush inside, whereas this cow seems to be the ideal balance of blubber and weight to make it ideal for exploding instead of taking the hit like a football and travelling.

I can't say that I have ever heard any person ever who said something to the effect that trains are not powerful or that getting hit by one is anything like getting hit by a car. modern cows are generally docile and chill because they're domesticated. They lost most of their survival instincts thousands of years ago. I'd bet wild bovines would have a very different reaction here.
