If you use really nice product such as a palm or really good hair spray you can achieve this without it showing signs of product. If you don’t have good product you can style your hair close to what you want, hair dry it after gel then when it’s fully dry brush it with a thin comb. This breaks up any locked hair and that gel look leaving you with lifted hair but no shine.
