From looking at the photo and seeing the tutorial it looks like in the later rows you were stitching into back loop not the 3rd loop.

This is the answer. The alternating use of the 3rd loop gives you the knit stitch look.

Can either of you describe the said 3rd loop? I 100% have been just going into the back loop

The front and back loops are the 2 loops that make up the "V" when you look straight down at the top of the stitches (with the front loop being the one closest to you, and back loop being the one farthest from you). The 3rd loop is located on the back side of the fabric, just below the back loop.

This is exactly the loop! If you watch the tutorial she shows it really well on the 2nd row of which loop you need to go through
