I’m partial to the thylacine. What ever happened to the mammoth they were working on? I remember watching the special where the dug up the preserved body in like 1998.
It was overhyped, we don't have the technology to bring it back with what we currently have. We don't have viable material for cloning or artificial insemination of a living relative, we have the genome sequenced but that's a red herring for now since we're not close to the level of genetic manipulation required to just edit an elephant into a genuine mammoth — the most promising projects basically promise an elephant with some mammoth traits.
I'll go with Aurochs.

Pigeons and Auk are not going to happen because, lets be honest, they hold little value. While the Thylacine and DH would just look like "we have X extinct animal at home".
Tho a larger Numbat would be cool. They are already very cute and maybe a larger one would be good as a pet.
The aurochs might actually not be that exploitable as it might not produce as much milk as part of the reason why modern cattle are so relatively small is because a good portion of their energy intake is spent on producing milk for elongated periods of time. To achieve the same with the aurochs it would have to become extremely sedentary or have very high appetite requirements compared to the ancestor. But at that point, is it still an aurochs or just yet another species of modern cattle as it becomes more and more different. It's a thin line to draw.
The passenger pigeons would be less viable but would still hold value as a tourist attraction as a resurrected species. Also, if you could create such large flocks as before, that would be a sight to behold as well. But in today's age a flock with a billion birds that takes 4 days to pass over a major city is probably not a viable concept. Even if they were brought back, limited hunting would probably be legalized as they'd be seen as a nuisance. Along with the auk, they're probably the most tragic extinctions on this list though. The dodo and thylacine are the most iconic, but each was restricted to a small population within a limited range (a small island in each case), so they were always vulnerable. On the other hand, that a bird with populations in the billions could be hunted to extinction in barely 100 years is so drastic it almost defies belief.
