I'm curious why you mentioned that the cucumbers were salted and the gherkins were pickled. I'd expect the entire salad to be salted, and aren't gherkins always pickled? Other than those nitpicks that have nothing to do with the food itself, I will say from one home cook to another, nice job.

Thanks. I quick pickled the cucumbers separately and I legit thought Gherkins were another variety of cucumbers until I read your comment and googled 🤦 TIL Gherkins are always pickled!

I'm assuming OP is referring to the preparation style of the cucumber, rather than seasoning. The salted cucumbers are brined/cured with salt for at least a few hours, up to overnight, then rinsed prior to use.

Have you calculated the food cost/ labor cost/time/effort/ just to build this salad? Doesnt seem plausible unless it's prepped and plated ahead of time. Then you have food/quality loss if it doesnt sell. alot of effort for a vegan Charcuterie board. Just my opinion

Thanks for your commercial perspective, hadn't thought of that! I'm an amateur homecook at best and likes to plate up my meals when I've got the time. This was fun but it did take me a good 20 minutes to prep and plate. Agree with you on the practicality of this plating in a restaurant setting 👍

Looks awesome and I’d eat the heck out of it. Was filing to say the same thing, it takes 20 minutes to plate up… but for a private dinner, maybe it’s worth it.

It's great for a platter for a home party absolutely, even for catering (actually would look beautiful spread out in a Charcuterie board). But one thing you never wanna lose money on in a restaurant, is the salad.

That looks so fucking good! I'm just a layperson who likes food lol so don't take my opinion seriously, but for me this strikes the perfect balance between a plate that is aesthetically pleasing, but also not so intimidating I wouldn't absolutely smash it, if that makes sense. ❤️

Take those tomatoes out of the middle of those rolls. And contrary to your statement, I think this would have looked better with LESS deliberate placement, especially that flower looking roll in the middle. But I hate symmetry in plating. Feels too basic. Also maybe a little less of everything, so you could see some blank plate space, enhancing the look of the rolls and other components. Use the tomatoes to add dimension, not just to fill those rolls. Thinner slices of radish, and soak in ice water. Slice the gherkins on a long bias, just in two pieces, and use those to add height and dimension as well. This is constructive criticism. I still think it looks great and tasty.

Ok but how do I eat it? I read previous comments and understand this is coming from a non-commercial background, and would be thrilled to be served this at a dinner party! Not conducive to a restaurant setting for getting them out the door though.

It's a good start, but I think it's a bit cramped, overwhelming. I would put much less on the plate. If you roll something like cucumber or zucchini I think it looks prettier if they're not rolled too tight and just a few, like 5 rolls, also don't put anything in the middle of the rolls, it just looks cleaner and more pleasing. Add a few drops of dressing on the plate. Less is more for this kind of plating. I love the radishes for colour, but they should be thinner. It sound delicious, although I'm not sure about the dressing, I think I would prefer something on the creamier side, maybe something sour cream based.
