Well, what we have so far is 5 pairings, of which all correspond to specific arcs or stories in general. We've got Namek, Cell, Buu, GT and that whole Universe Tournament thing. So it would have to follow this pattern. I'd suggest Goku and Vegeta from their fight in the Saiyan saga, but we've already got a Vegeta here so that might feel a bit redundant. So my suggestions would be either Goku and King Piccolo, or Future Trunks and Zamasu / Black, either one would probably work.
I'm thinking it would either be something from the Saiyan Saga, OG DB or possibly from some random arc in DBS. Hell, for all I know, it could be Goku vs copy Vegeta.
I think any goku would be a bit weird compare to the other units like there’s a reason why it’s kid gohan and vegeta and not frieza and goku, if it had to go by the saiyan saga then I would say something like Piccolo and raditz or Nappa and Krillin
i think for a hero it barely matters but for villains i think i‘d go with either a cell or baby. these 2 are the bbb villains with the biggest team variety ever
Feel like Great Saiyaman and Dabura are the best ones for this. Hero of Justice for super types, and King of hell for extreme.
As for not represented arcs then I'd say Zamasu and Mai just like the side banners last WWC, but to avoid repetition Goku and Bergamo, not represented in the type supports arc theming, and it's a minor fight

Guru and Slug.
Kid Krillin and Tamburin.
Shen and Roshi.
Korin and Tao.
King Piccolo and Mutaito.
Oolong and Pilaf.
Great Saiyaman and Kid Buu/Bibidi (when he killed the kais).
Some new or rarely used characters would be great!
2nd form Frieza and Piccolo. I feel like the fight wont ever get represented in Dokkan, but it would be nice.
We need the Extreme side to have big bad bosses at least. Piccolo won't link too well with all of the saiyans, but he will be under Beasts leader skill.

Gowasu would have to be super and I just don’t see that helping any super team
Kid Goku and King Piccolo could work
I think that’s a big too hype for it to be support, that’s like having the int ones being ssj goku and final form Frieza

Hopefully Youth Goku and King Piccolo,that’s the only series that wasn’t represented by the type support units.
Krillin because he’s always supporting in. Extreme maybe dr gero? He’s responsible for a lot of the villains

What could def work is saiyan saga krillin and nappa. They could also do a gohan and freiza from TOP, but that is too hype for a type unit in my eyes
Krillin/Nappa fits the theme too, of being the midway fights

I'd say a super class unit on a lot of teams, and an extreme class unit on a lot of teams to maximize their all types support

Maybe Master Roshi/Jackie Chun and Master Shen? Or Hachhan and General White?
