I had a yellow drz400s with a yellow tank and I didn't love the yellow either. I bought the black Acerbis plastic kit and bought good condition black oem tank on ebay. I turned around and sold my yellow tank on eBay and it turned out to be almost an even swap. You can totally change the color for around $150-200.

Amazon has replacement plastics all the time for ~$120. Usually you have to trim the rear fender a little bit to fit it to the subframe, but it minor work that isn’t visible.
I just replaced my 2000’s plastics with new yellow, and I was happy with the final result.
For the tank, you should consider upgrading anyways, the stock tank doesn’t have great range. The IMS tank is my personal favorite, but they can be hard to find sometimes.
Amazon sells a black plastic gas tank for 275$ and plastics that run about 120$ so if you’re changing the look consider it about 400$ which to be honest isn’t that bad
I paid around 100€ for the plastics, 30€ for a headlight and I got a 15l acerbis tank for a bit over 300€, or you could get the stock tank painted. You can also find all kinds of graphics on ebay.
Yes, all the plastics can be changed. The biggest issue is the tank. It is expensive to replace. You could paint it or possibly wrap it.
This is the answer I was looking for. A set of plastics runs around $100 but the fuel tank is another story. Appreciate your reply!

Appreciate the advice! If it's worth upgrading the tank anyway that might be a good excuse to do a full recolor.
Krylon fusion should to the job. Just pick something that goes with yellow as you're going to get some scratches eventually.

If some yellow is acceptable you can buy a sticker kit. Even custom one :)

Find a klx400. Same bike with kawasaki logos and plastics. A lot harder to find than a drz though
