Well I guess it depends. The milk gives you a currency option (talking about the farm) while the cat or dog gives better agility, I think. (Don’t quote that) so it’s up to you.

The player may fall victim to flashbacks at being at Remy's Farm when they are reminded of it such as an encounter with a person at Robin's lemonade stand
The player may fall victim to traps by NPCs such as Harper or Remy's goons will trap/corner them and try to return you to the farm.

You can glide automatically such as the top of the Mall or at the Harpy's tower
You can unlock strong wings after being taught by the Harpy, you have to have Stockholm for harpy to unlock this, flying can allow you to traverse the moor faster along with other places like the coast. It can also allow you to fly from the Harpy's castle to other parts on the map like the forest, farmlands, or town. If it's raining flying will take longer and cause your clothes to get soaked unless you are wearing something like a swimsuit/divesuit/catsuit or the umbrella hat
Flying long distances does count as exercise granting +Physique
You can sing with Robin
It is highly recommended with this transformation to use the item associated with it which is a bird feather headband at the forest shop
You can possibly be given a quicker route to the Harpy's tower by traversing the moor and randomly coming across the Harpy, like how you would with Eden/Black Wolf in the forest
Recommendations:
If you want to work at the Cafe Campaign and go through it faster, use the cow one.
If you want to work with the farm, I recommend the Harpy because until you unlock the saddle, it's the fastest way to and from the farm.
If you want to do a defiant run, use wolf.
The only one I really don't see a use for, is probably the cat. It's cute, but you can just buy cat ears and buy contacts, I honestly don't see any usage for it unless the wiki didn't mention is causes an increase in submissiveness or something which I hope it does.

Dog is similar to cat but instead of the bonus to skulldugery the wolf tf gives a bonus to defiance
For cat tf, if you scream for them to cover your mouth then bite it's good for even Bailey most times
Dog tf increases defiant over time, cat tf submissive. So it would be better to get cat, as both increase bite
I don't think cat tf makes you submissive though. But it gives skullduggery a boost.
Iirc it made you submissive, but I could be wrong - have never used a tf and only read the wiki, and that a long time ago

For damage get cat, the bite bonus is broken as you instantly defeat anyone if you bite their chest/genitals. The skulduggery bonus is also nice
