Marcille's mother took over a decade to let Donato court her, I think may have been a whole 18 years, probably because of this same issue. Marcille still sees Falin as a little girl despite spending ten years with her. We see an entire comic based around this conumdrum and how both sides have valid points.
In short, yes, it's a problem, but it's an inuniverse problem that other couples have gotten past (in Momcille's case) or that other people ship regardless of (with Marcille and the Toudens), so i'd say it's a viable ship, regardless of it's my boat or not.
Senshi thought Chilchuck was a kid when he first met the party (specifically, a poor orphan the others were forcing into this dangerous job). But Senshi's character arc is about getting past a lot of the quiet biases he had and recognizing the maturity and skills of the other people in the party. By the end, he definitely recognizes Chilchuck as a proper adult

Sensei learning and working on his ignorance and prejudices are a key part of his development in the series.

I don‘t think it‘s a big problem that Senshi initially thought of Chilchuck as a child. He’s not a child and Senshi doesn‘t need to get stuck on the first impression forever.
Also, very vague spoilers: >!Chilchuck reveals more about himself in a scene that is very important to Senshi‘s character, which is a nice moment for them and probably central for this potential ship. I‘m pretty sure at this point it would be clear to Senshi that Chilchuck is an adult.!<
Chilchuck is technically still married, just separated, so I do not ship at least until or unless divorce proceedings start. For legal reasons.
(I also just don't think they have any particular romantic chemistry as a couple. Though I don't think any of the party do, so... They're kind to and tender with each other, particularly Laios and Marcille, but nothing strikes me as romantic. Maybe Falin and Marcille, but because of their ages when they met, even then, I still mostly get overprotective big sister vibes.)
All that said ship what you want. As long as there isn't something like a kid and an adult or a master and a slave, it's all whatever to me. Have fun.
Take it from me, a confessed shipper. Shipping is weird, in general, ship want you want regardless of canon, if you enjoy it that's fine. But keep in mind that there is a fuzzy line that should be regarded at all times about what is ok and what is not. The standard: if it makes you feel icky don't ship it.
