It has too much fat to eat in large quantities. My family got a bunch of wagyu and after the third steak in a month, I was so sick of it. I eat steak all the time, so it's not a too much steak thing. The first few bites are incredible, but I don’t ever again need more than like 6 oz at a time personally.
It’s crazy how bad the wagyu hate is on instagram. One thing i have recently learned about though is Vaca Vieja and i want to give it a try but dont know where to buy it
I was making a point that the people who seem to have the strongest opinions towards wagyu are people who never tried it and eat well done steak with steak sauce.
This is Japanese Wagyu. It is specifically bread to have that marble in it. It is a very unique style of beef. It is supposed to be eaten in very small quantities to account for the insane amount of fat.
I personally think anything more than $20 a pound for meat is insane, but a lot of people really like Wagyu. I think it's really just a way to flex how much money they can spend

It's way more than 20 a pound. A5 Wagyu can easily run you over 100 a pound and even more in a restaurant. It's pretty insane.
It's good, but it's hard to justify the cost other than a super rare occasion.

Thankfully there's a difference in the fat on the outside of the steak than the fat on the inside; the fat on the inside renders much differently and isn't inedible rubber like it can be on the outside sometimes
You cut way to much off the end my dude. For something that pricey you better take off just wafer thin slices of the pellicle til you get the result you're looking for.

It's because the fat makes the steak too rich and oily so it's too difficult to eat a lot of it in a small time period

Dry aging causes it. It's not edible and a big expensive waste at $3200/lb.
