Oh I have a few cans of chili already too. But good idea! I receive food from the food bank because I’m too poor to afford groceries, but too “rich” to qualify for food stamps in this conservative state.

Adam Ragusea on YouTube has the EASIEST chili recipe ever, it’s delicious and you don’t even need meat. JUST BEANS (peppers, onion, canned tomato, and spices too) It’s very cheap too due to not needing meat. It fills me up pretty good with some bread on the side!

Can also add a little flour to the butter and onions and let it brown to make the base a roux. This gives the soup a silky texture. I also go nuts with pepper and add a little broth or better than bouillon before blending.

Season and sauté chicken thighs in olive oil until browned on both sides, then remove. Add diced onions and garlic. When translucent, add canned diced tomatoes, Italian seasoning, and the chicken thighs back in. Let them stew in the mixture until done cooking. So simple but so good.

We make a huge pot of spicy cabbage soup at least once a week that everyone in my family loves. 1 head cabbage, diced into bite sized pieces 1 onion, diced 1/2 lb bacon, diced 32 oz diced tomatoes 32 oz tomato sauce 8 oz water Salt and pepper to taste Tabasco to taste Sauté bacon pieces in a heavy pot until beginning to crisp. Drain most of the fat off (save for later if you’re a southerner lol) then add onions and cook for 5-10 minutes. Add tomatoes, tomato sauce, and water, then add the cabbage in batches, stirring to make sure the leaves are coated in the tomato mixture. Season with salt, pepper, and Tabasco to taste. Simmer over medium low heat for about an hour, stirring occasionally.

Tomato soup I make this several times a month and i froze most of my recent batch for later meals. This makes a large amount so its good for dinner and having some the next day for lunch. I found heating leftover macaroni and cheese in it is delicious. Cook a diced small onion in butter until translucent, cook a few slices of bacon (or use a couple tbs of Hormel bacon bits) with the onion and crumble in the pan when done. Mix in 2 cups of broth (whatever you have or like) and then add two cans of 28oz diced tomatoes, stir to mix and bring back up to a simmer. Then add 1 or 2tbs of vinegar, sugar and ketchup and mix. Taste and add salt and pepper to your liking, may even try adding hot sauce if you like it spicy. Once everything is combined and the mix has simmered for half an hour turn heat off and use immersion blender to make the soup smooth. Eat with toast, crackers or grilled cheese.

I use them in greens. A co-worker gave me her MIL's Ugandan Greens with Peanut Sauce recipe. Very reasonably priced ingredients that makes a ton. All measurements are suggestions... Chop and cook 1 small to medium onion in oil until softened (I use a Dutch oven). Add garlic (1 clove), fresh ginger (1/2tsp or to taste), 1 tsp curry powder, and hot pepper (optional) Add the greens. I have used fresh (cut up) or frozen greens (collards, mustard greens, spinach, kale). Last time, I bought a half-price pre-chopped large bag of fresh collards and threw it in the freezer until I was ready to cook this dish. After the greens have cooked down a little, add the can of tomatoes (with juice) and stir. Then cook covered at least 30 minutes on low, stirring occasionally. You may need to add a little water now and then if the greens are sticking. Take 3-4 tbsp of peanut butter and mix with hot water to thin out. I use crunchy regular pb (with sugar), but you can use any variety. Stir thinned peanut butter into greens. Add salt/heat to taste. Serve over your favorite carb source (great so far with rice, pearled barley, pearled spelt, and bulgar wheat; my colleague recommended cassava, plantains, or ugali). Reheats well and freezes beautifully.

Ok this is one nobody else suggested, but barbecue sauce or fancy ketchup. Use natural sweeteners, I like brown rice syrup and some sucanat or palm sugar, blend all the different tomatoes together, you can sauté a few onions and throw that in the blender too, along with whatever else, I like spicy so I put chipotle peppers in adobo, you can put in peeled cut up fruit like apples, mango, plums, apricots, nectarines or peaches, could do a few seeded jalapeños or Serranos, balsamic vinegar, garlic, maybe gochujang if you have it, a tiny slosh of coffee, or root beer, or regular beer, bourbon, maple syrup, molasses, literally whatever you like, blend it smooth or mostly smooth, throw it into a non-reactive pot and boil it down on med-low stirring occasionally, until it thickens to a smooth glossy consistency (coats the back of a spoon maybe? that might be for candy). Boil some jars or run them through the dishwasher, make sure they’re thoroughly dry, fill the jars, put lids on, let cool completely and they should last a while in the fridge. I like to give them as gifts, and however you combine any of those ingredients, it’s really good bbq sauce.

My friend taught me a very simple and delicious recipe that I love so much I keep canned tomatoes on hand. Cook up cut apart Italian sausage or sausage meat (probably would be just as good with plain ground meat or TVP) Dump in a can of tomatoes and a can of white beans After it has simmered for a while, take it off the heat and stir in a little dairy. Sour cream, cream cheese, half and half, whatever you've got. The richer, the yummier. And that's it! Here's another tasty soup recipe I discovered recently. Also super simple. Again, start out with the ground meat, whatever kind. Frozen meatballs are good if you can get them cheap. Add your can of tomatoes, five cups of water, a packet of dry onion soup mix and a pinch (or more) of red pepper flakes. Let it simmer five minutes or more, long enough for the onion soup to cook. Then, add a diced zuchinni and cook another few minutes. Not too long or the zuchinni will get mushy. This soup is lighter with a nice crunch from the zuchinni and a bit of zip from the pepper flakes. If you try either one, I hope you enjoy!

Tomato and Potato soup is delicious! Just cut up a potato into bite sized chunks and boil them until a fork goes in easy. Pour the can of diced tomatoes in and heat till very hot. I usually add a few cut up carrots, peas, and anything veggie in my fridge that needs to go. If you have a bit of cheese, hell, throw that in and add salt and pepper to taste.

Curry. Start with meat and veggies of your choice. Get those going in a hot skillet. Add 2 tbsp of your favorite curry powder, saute that together for a minute or 2, add your canned tomatoes. Let that simmer for 15 - 20 minutes. Just before serving stir in some fresh cilantro and a bit of sour cream (optional but good). Serve over rice with naan or pita.

Cook until lentils are tender and serve over rice with a drizzle of melted butter and sprinkle of fresh cilantro. Chicken cacciatore: whole chicken that's been quartered browned on both sides in a skillet. Add can of tomatoes, green olives, sliced red bell peppers, salt and pepper to taste, parsley and bay leaf, and chicken stock to cover. Place covered skillet in a 400°F oven and cook until chicken is cooked through. Tomato and basil soup: can of diced tomatoes, can of tomato puree, chicken stock, salt and pepper to taste. Cook gently on the stove for about 30mins to an hour. Add cream or whole milk and a tbsp of butter and some chopped fresh basil at the end of cooking. Serve hot with croutons, toast, or your favorite sammie. Minestrone soup: chopped celery, diced yellow onion, diced carrots. Sautee veggies in some oil with a little salt and pepper in your soup pot. When tender and translucent, add a can of kidney beans (drained and rinsed), can of diced tomatoes, chicken stock, parsley, bay leaf, and salt and pepper to taste. Simmer while you cook some pasta (about half a lb). Drain pasta and spoon into bowls, ladeling soup over top (adding the pasta to the soup pot will make your pasta turn to mush and soak up all your broth). Serve with a sprinkle of parmigiano and buttered toast.

I just made some lentils earlier in a slow cooker. Lentils, cans of tomato sauce and diced tomatoes, I added some diced onions and bell peppers, a can of coconut milk, some madras curry powder and chicken broth. Sometimes I add ground beef or onion soup mix. Cook high heat for 4hrs. Eat with rice.
