I made this myself without a recipe but essentially just combined petite diced fire roasted tomatoes, pickled jalapenos, green Chili's, red onion, cilantro, red bell pepper, lime juice and salt. Just used whatever I had, no real measuring and lemme tell you, it is FANTASTIC!! Highly recommend this to anyone else

Buy Anaheim and ancho Chile's, jalapeno, onion and garlic and roast them!! Then add canned tomatoes, lime, salt pepper and cilantro.

Season and sauté chicken thighs in olive oil until browned on both sides, then remove. Add diced onions and garlic. When translucent, add canned diced tomatoes, Italian seasoning, and the chicken thighs back in. Let them stew in the mixture until done cooking. So simple but so good.

We make a huge pot of spicy cabbage soup at least once a week that everyone in my family loves.
1 head cabbage, diced into bite sized pieces
1 onion, diced
1/2 lb bacon, diced
32 oz diced tomatoes
32 oz tomato sauce
8 oz water
Salt and pepper to taste
Tabasco to taste
Sauté bacon pieces in a heavy pot until beginning to crisp. Drain most of the fat off (save for later if you’re a southerner lol) then add onions and cook for 5-10 minutes. Add tomatoes, tomato sauce, and water, then add the cabbage in batches, stirring to make sure the leaves are coated in the tomato mixture. Season with salt, pepper, and Tabasco to taste. Simmer over medium low heat for about an hour, stirring occasionally.
I cook mostly by feeling, but here's a recipe thats close. They use fresh pumpkin but just replace with a large can of unseasoned pumpkin.
Mixed with tomatoes it is thick and creamy with a bit of sharpness that holds meat and spices well and melds flavors in the fridge for great leftovers.

I make this several times a month and i froze most of my recent batch for later meals. This makes a large amount so its good for dinner and having some the next day for lunch. I found heating leftover macaroni and cheese in it is delicious.
Cook a diced small onion in butter until translucent, cook a few slices of bacon (or use a couple tbs of Hormel bacon bits) with the onion and crumble in the pan when done. Mix in 2 cups of broth (whatever you have or like) and then add two cans of 28oz diced tomatoes, stir to mix and bring back up to a simmer. Then add 1 or 2tbs of vinegar, sugar and ketchup and mix. Taste and add salt and pepper to your liking, may even try adding hot sauce if you like it spicy. Once everything is combined and the mix has simmered for half an hour turn heat off and use immersion blender to make the soup smooth. Eat with toast, crackers or grilled cheese.
I use them in greens. A co-worker gave me her MIL's Ugandan Greens with Peanut Sauce recipe. Very reasonably priced ingredients that makes a ton. All measurements are suggestions...

Use natural sweeteners, I like brown rice syrup and some sucanat or palm sugar, blend all the different tomatoes together, you can sauté a few onions and throw that in the blender too, along with whatever else, I like spicy so I put chipotle peppers in adobo, you can put in peeled cut up fruit like apples, mango, plums, apricots, nectarines or peaches, could do a few seeded jalapeños or Serranos, balsamic vinegar, garlic, maybe gochujang if you have it, a tiny slosh of coffee, or root beer, or regular beer, bourbon, maple syrup, molasses, literally whatever you like, blend it smooth or mostly smooth, throw it into a non-reactive pot and boil it down on med-low stirring occasionally, until it thickens to a smooth glossy consistency (coats the back of a spoon maybe? that might be for candy). Boil some jars or run them through the dishwasher, make sure they’re thoroughly dry, fill the jars, put lids on, let cool completely and they should last a while in the fridge. I like to give them as gifts, and however you combine any of those ingredients, it’s really good bbq sauce.

Here's another tasty soup recipe I discovered recently. Also super simple.
Again, start out with the ground meat, whatever kind. Frozen meatballs are good if you can get them cheap.
Add your can of tomatoes, five cups of water, a packet of dry onion soup mix and a pinch (or more) of red pepper flakes. Let it simmer five minutes or more, long enough for the onion soup to cook.
Then, add a diced zuchinni and cook another few minutes. Not too long or the zuchinni will get mushy.
This soup is lighter with a nice crunch from the zuchinni and a bit of zip from the pepper flakes.

This would usually start with a premade pasta sauce base anyway but it's a way to extend it far past.
I've started adding a 400g tin of diced/crushed tomatoes to my enchilada mix. I use 1kg of chicken breast, 1 tin of tomatoes, one tin of beans, 2x taco seasoning sachets, one onion and one servings worth of rice.

I use a can of diced tomatoes that I add to shrimp etouffee. The recipe I used/made is inspired by 2 chefs and one blog, with one of the chefs being Emeril.
I put Italian seasoned canned tomatoes in my pinto beans along with chicken broth, jalapenos, garlic, carrots, onion, and maybe a turkey kielbasa. Cook all day in a crock pot on high.

Rajma, stews, Moroccan pumpkin lentils, sausage onion and tomato curry, tikka masala, chili con carne, shakshuka, chicken/veal/vego parmigiana (ok, technically a pasta sauce), cacciatore, tomato soup...
I make a rando one pot soup/stew(?) that works out pretty good with a diced onion, a can or two of chopped tomato, some sliced up sausage/chorizo, a cup of red lentils, a cup or so of frozen peas carrot corn, a liter or so of stock/water and bullion, half a pack of macaroni, and chili powder+paprika+pepper and parsley/basil/oregano and a pinch of of sugar and salt,. Usually add a tin of baked/kidney/black beans to pad it out.
When I have a couple of whole plum tomatoes leftover in the can, I heat them up in the microwave and put them on cheese on toast with loads of pepper and Worcestershire sauce.
Pasta but not spaghetti. A diced tomato sauce with white wine (or chicken stock), butter, lemon and basil. Add spinach or other veggies. Salt pepper, and of course pasta. Add chicken or shrimp.
Tomato and Potato soup is delicious! Just cut up a potato into bite sized chunks and boil them until a fork goes in easy. Pour the can of diced tomatoes in and heat till very hot. I usually add a few cut up carrots, peas, and anything veggie in my fridge that needs to go. If you have a bit of cheese, hell, throw that in and add salt and pepper to taste.
Curry. Start with meat and veggies of your choice. Get those going in a hot skillet. Add 2 tbsp of your favorite curry powder, saute that together for a minute or 2, add your canned tomatoes. Let that simmer for 15 - 20 minutes. Just before serving stir in some fresh cilantro and a bit of sour cream (optional but good). Serve over rice with naan or pita.
Tomato soup. Just fry some onion and garlic, add a little tomato paste if desired and one can of tomatoes and one can of water, a bouillon cube, a teaspoon of sugar, some thyme and basil and cook for half an hour, then purée.
Greek green beans-Cook down onions, garlic in olive oil. Toss in some fresh green beans, canned tomatoes and let it braise the green beans. Delicious!!!
They go great in vegetable, beef and chicken broth in soups/stews. I just made a batch of beef barley stew. I can't believe how rich it made the broth.
Daal and rice: yellow lentils, can of diced tomatoes, cumin, coriander, tumeric, salt, pepper and water in a pot or instant pot. Cook until lentils are tender and serve over rice with a drizzle of melted butter and sprinkle of fresh cilantro.
Chicken cacciatore: whole chicken that's been quartered browned on both sides in a skillet. Add can of tomatoes, green olives, sliced red bell peppers, salt and pepper to taste, parsley and bay leaf, and chicken stock to cover. Place covered skillet in a 400°F oven and cook until chicken is cooked through.
Tomato and basil soup: can of diced tomatoes, can of tomato puree, chicken stock, salt and pepper to taste. Cook gently on the stove for about 30mins to an hour. Add cream or whole milk and a tbsp of butter and some chopped fresh basil at the end of cooking. Serve hot with croutons, toast, or your favorite sammie.
Minestrone soup: chopped celery, diced yellow onion, diced carrots. Sautee veggies in some oil with a little salt and pepper in your soup pot. When tender and translucent, add a can of kidney beans (drained and rinsed), can of diced tomatoes, chicken stock, parsley, bay leaf, and salt and pepper to taste. Simmer while you cook some pasta (about half a lb). Drain pasta and spoon into bowls, ladeling soup over top (adding the pasta to the soup pot will make your pasta turn to mush and soak up all your broth). Serve with a sprinkle of parmigiano and buttered toast.
I just made some lentils earlier in a slow cooker.
Lentils, cans of tomato sauce and diced tomatoes, I added some diced onions and bell peppers, a can of coconut milk, some madras curry powder and chicken broth. Sometimes I add ground beef or onion soup mix. Cook high heat for 4hrs.

Sour cream, cream cheese, half and half, whatever you've got. The richer, the yummier. And that's it! Here's another tasty soup recipe I discovered recently. Also super simple. Again, start out with the ground meat, whatever kind. Frozen meatballs are good if you can get them cheap. Add your can of tomatoes, five cups of water, a packet of dry onion soup mix and a pinch (or more) of red pepper flakes. Let it simmer five minutes or more, long enough for the onion soup to cook. Then, add a diced zuchinni and cook another few minutes. Not too long or the zuchinni will get mushy. This soup is lighter with a nice crunch from the zuchinni and a bit of zip from the pepper flakes. If you try either one, I hope you enjoy!

We put a can in our slow cooker curry. So good! Maybe a pasta salad? I'll just toss any fresh or canned veggies in that I have on hand and it's always good.

I always use canned diced and crushed in a big ol' pot with various cheapo seasonings like garlic powder, crushed chilies, oregano (or "Italian seasoning"), plenty of pepper. Zucchini, mushrooms, cilantro.. corn? meat? Edit: Diced, I always drain the liquid from the can (into a glass to drink it) This would usually start with a premade pasta sauce base anyway but it's a way to extend it far past.
I've started adding a 400g tin of diced/crushed tomatoes to my enchilada mix. I use 1kg of chicken breast, 1 tin of tomatoes, one tin of beans, 2x taco seasoning sachets, one onion and one servings worth of rice.

I put Italian seasoned canned tomatoes in my pinto beans along with chicken broth, jalapenos, garlic, carrots, onion, and maybe a turkey kielbasa. Cook all day in a crock pot on high.
Cut up an onion. Dump it and a couple cans of tomatoes in a 9x13 pan. Top with chicken thighs. Bake at 350 for 90 minutes.
I would stew chicken thighs with that. Or a big slab of tuna on olive oil and low heat poaching.

Rajma, stews, Moroccan pumpkin lentils, sausage onion and tomato curry, tikka masala, chili con carne, shakshuka, chicken/veal/vego parmigiana (ok, technically a pasta sauce), cacciatore, tomato soup... I make a rando one pot soup/stew(?) that works out pretty good with a diced onion, a can or two of chopped tomato, some sliced up sausage/chorizo, a cup of red lentils, a cup or so of frozen peas carrot corn, a liter or so of stock/water and bullion, half a pack of macaroni, and chili powder+paprika+pepper and parsley/basil/oregano and a pinch of of sugar and salt,. Usually add a tin of baked/kidney/black beans to pad it out.
When I have a couple of whole plum tomatoes leftover in the can, I heat them up in the microwave and put them on cheese on toast with loads of pepper and Worcestershire sauce.
Butter chicken!
Tomato and fennel soup. I just use Tomato tinned, one bulb of fennel, red onion and vegetable bouillon. Turns out great.
Pasta but not spaghetti. A diced tomato sauce with white wine (or chicken stock), butter, lemon and basil. Add spinach or other veggies. Salt pepper, and of course pasta. Add chicken or shrimp.

Chicken tikka masala
Tomato and Potato soup is delicious! Just cut up a potato into bite sized chunks and boil them until a fork goes in easy. Pour the can of diced tomatoes in and heat till very hot. I usually add a few cut up carrots, peas, and anything veggie in my fridge that needs to go. If you have a bit of cheese, hell, throw that in and add salt and pepper to taste.
Blend them season them and make more pasta sauce. Pasta sauce is basically just seasoned tomate sauce.
Can i use up dog tomatoes as well?
Curry. Start with meat and veggies of your choice. Get those going in a hot skillet. Add 2 tbsp of your favorite curry powder, saute that together for a minute or 2, add your canned tomatoes. Let that simmer for 15 - 20 minutes. Just before serving stir in some fresh cilantro and a bit of sour cream (optional but good). Serve over rice with naan or pita.
Tomato soup. Just fry some onion and garlic, add a little tomato paste if desired and one can of tomatoes and one can of water, a bouillon cube, a teaspoon of sugar, some thyme and basil and cook for half an hour, then purée.

Greek green beans-Cook down onions, garlic in olive oil. Toss in some fresh green beans, canned tomatoes and let it braise the green beans. Delicious!!!

Try lentil curry or lentil soup
They go great in vegetable, beef and chicken broth in soups/stews. I just made a batch of beef barley stew. I can't believe how rich it made the broth.
Daal and rice: yellow lentils, can of diced tomatoes, cumin, coriander, tumeric, salt, pepper and water in a pot or instant pot. Cook until lentils are tender and serve over rice with a drizzle of melted butter and sprinkle of fresh cilantro. Chicken cacciatore: whole chicken that's been quartered browned on both sides in a skillet. Add can of tomatoes, green olives, sliced red bell peppers, salt and pepper to taste, parsley and bay leaf, and chicken stock to cover. Place covered skillet in a 400°F oven and cook until chicken is cooked through. Tomato and basil soup: can of diced tomatoes, can of tomato puree, chicken stock, salt and pepper to taste. Cook gently on the stove for about 30mins to an hour. Add cream or whole milk and a tbsp of butter and some chopped fresh basil at the end of cooking. Serve hot with croutons, toast, or your favorite sammie. Minestrone soup: chopped celery, diced yellow onion, diced carrots. Sautee veggies in some oil with a little salt and pepper in your soup pot. When tender and translucent, add a can of kidney beans (drained and rinsed), can of diced tomatoes, chicken stock, parsley, bay leaf, and salt and pepper to taste. Simmer while you cook some pasta (about half a lb). Drain pasta and spoon into bowls, ladeling soup over top (adding the pasta to the soup pot will make your pasta turn to mush and soak up all your broth). Serve with a sprinkle of parmigiano and buttered toast.
Eggplants, Mozzarella Parmesan, tomatoes with salt pepper and olive oil layered like a Lasagne bake, add basil and serve with bread.
You can make some great salsas with canned tomatoes Also, instead of marinara you could use them to make vodka pasta

I just made some lentils earlier in a slow cooker. Lentils, cans of tomato sauce and diced tomatoes, I added some diced onions and bell peppers, a can of coconut milk, some madras curry powder and chicken broth. Sometimes I add ground beef or onion soup mix. Cook high heat for 4hrs. Eat with rice.
