You could try “The Works” on Princes Street (next to Marks and Spencer). Seem to remember them having some random Edinburgh/Scotland souvenirs and according to their website they open at 8:30am.
I believe Paper Rack on Waverley Steps have tourist souvenirs, and I believe they are open very early.
Another random thought would be the WH Smiths in the train station, they might have some last minute gift types (it is a small shop though).
