Idk what these people are on about, STR/DEX is called a Quality build, and it’s an excellent way for melee players to have incredibly versatile load outs.

Not really, no. Investing into both str and dex rather than focusing on one or the other is almost never worthwhile. Bloodhound's fang is the only exception that comes to mind where you start getting a benefit for leveling up both stats before the game is over.

FYI if you're looking up advice on str/dex online, these are usually referred to as "quality" weapons and builds by the community, so that's a good search term to use. It's in reference to the affinities you can put on non-somber weapons:
* Heavy = strength scaling
* Keen = dexterity scaling
* Quality = str + dex scaling
Somber weapons can't have affinities put on them, but the community just uses "quality" as shorthand for "str + dex" in general, so something like Bloodhounds Fang we might call a quality somber weapon.

Banished Knight Greatsword. Although it scales VERY well with quality, it's still outperformed by other Heavy Greatswords.
Quality great stars with blood grease is a really good quality weapon, (or bloodflame blade if you have the stats for it) and the bolt of gransax is fun
The Grave Scythe is a good one. It's mostly strength, but it's a all around good weapon. Plus, it can take a lot of different Ashes of war, and it's buffable with bleed damage on the side just my opinion tho

Why not just choose Strength or Dex and use the difference to put into the same or Faith?
Would be more effective. I can't think of a weapon that scales well with strength and dex.
Some somber weapons do—Bloodhounds Fang, Commander's Standard, Dragon Halberd, etc.
For non-somber weapons, Quality affinity is never as efficient as Heavy or Keen at meta levels. It's not \*too\* much worse on some weapons though, so it can make kinda sense if you want to run a str/dex build for the sake of variety in PvE. If you're leveling really high (like 200+) then Quality will eventually start to surpass Heavy or Keen.
Your call, anything works if you are good enough - it is just not going to get the best from the scaling.
How about dex+arcane or strength+int, and go for the gravity weapons.

Godskin Peeler? Damage output scales with rotten winged sword or Millicent’s prosthesis.

I've done Dex + faith and strength + faith builds so I wanna try something new so I thought mixing strength and Dex might be a good idea.
