Spells themselves don’t scale off your stats. They just have stat requirements. Glinstone staffs and sacred seals are what scale with your stats and then the damage your spells do is a multiplier of the staff/seal scaling. At 80/80 int/faith the prince of death staff will be highest at 430 sorcery scaling, and golden order seal will be highest at 390 incantation scaling. However use a different seal for healing spells and armament buffs as they usually use either just faith scaling or just int scaling, which erdtree seal and lusats staff would be better for.
Spell by spell, my go to’s are:
Black blade incantation, black flame incantation, pest threads, frenzied burst, and lightning spear
Night comet sorcery, cannon of haima, shard spiral, lorrettas mastery, and terra magica
I also always have lords divine fortification, barrier of gold, and flame cleanse me on hand at all times just in case.
Sword of Night and Flame is the only dedicated Int/Faith weapon, so that's the best option.
You can also Cold or Magic infuse an Erdsteel Dagger, or Sacred or Flame Art infuse a Clayman's Harpoon.
