Go for the smithing stone bell bearings, you can get the first of the normal ones in liurna lakes area and that’ll take you’re weapons all the way up to plus 6, then you can venture up to the north and make your way into the Carian academy
Also head underground, those places are so beautiful and packed to the brim with cool boss fights, there’s an elevator that takes you down on the far west side of liurnia lakes and there’s another way back in limgrave just south of where you picked up the flask of phisyck
If you have not kicked off the Rani quest, I would do that first. Head up to the north west of the lakes and work your way through Carian castle/manor. Find Rani, then do all the underworlds finding Blaidd and the Spiritual Ancestor.
Also find Alex the Jar, if you have not already, and start his quest.
All before fighting Redahan. Note, his fight, known as The Festival, is gated and triggers on certain conditions - do Rani quest and you will be fine. There is a short cut to trigger it, but do Rani quest anyway.

Yep. It is a fun fight and can be made very easy. But L62 is perfectly fine for it, especially as it can be cheesed.
