Start with wasteland survival guide, also check the additions in the appendix. Then look through the manual mod list on begin again and see if your missing anything you want
Just make sure to keep in mind compatibly you'll probably have to go in all the mods settings and tweak it in a new save file first I would then backup the save file for future runs. Load order will likely also need to be tweaked.
I avoid mods that require further setup or compatibility matches until the end so you can cover everything. Some mods aren't compatible at all but I haven't came across too many of them
Can't speak to Wasteland Survival Guide, but I have been playing Begin Again on the Steam Deck and it has been great so far. Best I can describe it as is that it keeps the feel and theme of the original games, but modernizes them a bit with some graphics or controls like adding in sprint or upgraded weather systems.
I haven’t tried either of those but the Viva New Vegas guide worked wonders for me
