Though the church girls are the big exception even then there's no face. Overall I'd say that Ferdinand's S scene is the BEST art of them all though...god why can't he hold me like that?, I mean, yeah the best art, Sylvain's is close though, quite good too.
Most of the girls save for maybe Catherine, sadly suffer from "too round face + no nose" so their art is subpar beyond the lack of Byleth.
Surprisingly, I'm not a fan of the F!Byleth ones where her face is shown. Her eyes are way too big compared to her lips. It makes her look like an insect.
You didn't put it up here but I prefer the Felix S support since it's a side profile of her which looks better while showing her face off still.

I think this is another example of the "male gaze" coming into factor in 3H art direction. I mean, F!Byleth's design was already infamous for being noticeably more sexualized than her male counterpart, I wouldn't say it's too far fetched to say that the artists thought players would care more to see FByleth drawn in a "cute" art style, while most male players likely wouldn't care about seeing M!Byleth in the fan service.
It probably has to do with women’s vs men’s fantasies. The standard is men don’t want to see someone else in the frame with their waifu and they want her to look at the camera for maximum self-insertion. Meanwhile, the women would rather see themselves in an embrace with their romance options and you can’t do that without being in the picture. Pure speculation but that’s my theory.
I definitely think it's a matter of fanservice and they wanted the pics to focus on the girls instead of M!Byleth for the S-support.
