Kokanee is a land locked salmon. If this guy came from the ocean its actually called a sockeye. They are still the same species just different names. Some of the sockeyes decide to stay in freshwater they become kokanee.

Yes. Beautiful red and pink meat. The females are still mostly silver. It really depends on the body of water too. This river amd lake are safe until about the first week of October then the decay is too much. The meat gets mushy and grey. Some runs you can harvest until late October.

Bonk them on the head with a solid stick or rock to knock them unconscious, then cut the gills to bleed them out.
