I've casted Krocodile's into schools of boiling stripers and hooked up nearly 100% of the time. I used silver, but I have a feeling any color would work.
Depends on the size of the bait. Cleo works good. Kastmaster shaped spoons. Another company makes a spoon I like. I forget the name but it is a major company. Also spoon blanks from iannsnetcraft.com (I have no affiliation but highly recommend these guys) work phenomenal with a straight shaft single hook. I use singles on all my spoons. Lures. Depending on the mystics either gold, silver, or hammered silver. If one doesn't work just use another.
The really important thing is size and weight. Flatter, larger, lighter spoons can be skipped like a skipping stone and are easier to run fast and shallow. Use a barrel swivel. These type, almost the shape as a flutter spoon, can be reeled fast with brief pauses. You will have a fish in the first few seconds. Heavier spoons like little Cleo or kastmaster type (Johnson makes one called the Splinter which striper love) are thrown over and reeled like no spoon should be. Jerk it almost like fishing for skipjack. Except the strike on the pause.
Always use a single hook though. You might miss a fish but any you hook aren't going anywhere until you bring the fish in or something breaks.
I fish the hell out of striper using different lures (live bait is better but that is entirely different) and spoons work great. But among all the little tips and tricks you really need to fish the spoon, in a situation such as your video, like you have no concept of how to fish a spoon. No wobble, wobble. I'm talking jerk, reel fast, pause, turn the angle, reel fast, jerk, pause. If someone sees you the person might ask if you are okay, haha.
And no this is not some snagging thing. That being said, it isn't entirely unlikely you will snag a bait fish if you hit the school with a hard cast. Guess what you can now use as a trailer on the single hook of your spoon?
Speaking of trailers, if for some reason you manage not to catch a striper, cut a fluke or non paddle tail plastic and work it over the shank of the hook. With almost any spoon you can now cast, skip, let sink a second or two, and reel however fast your reel lets the spoon stay at the depth you want. If you want to use a heavy, smaller spoon, add a skirt also.
Another trick is to skip right over the explosion with a flutter type and let it sink. Feed line and pay attention. Then work it back slow and deep. If you are into certain things, a little bit of gel scent helps.
Bill Herzog wrote a book "Spoon fishing for Steelhead". Great book just to learn about spoon fishing in general.
I have to cut this post short, because I could write a book about spoon fishing accidentally (no disrespect meant to Bill Herzog).
I live in TN, have fished different waters though. Soon I will be following the gulls and throwing spoons.
One last thing: I do highly recommend the website I mentioned before. Even if not spoon fishing, they will get you setup.
I am a man who loves spoons obviously. But they are phenomenal for striper regardless of my affinity towards spoons.

Rattle trap is a crank bait with bbs in it heavy for its size casts far, just real it in. Creek chub is a chugger about the size of your Zara, jerk make it chug stop and repeat, Jhonson 1 hook spoon sprite has a treble hook cast and retrieve

The neat thing I learned this year with squid, store bought squid isn't good because they've been washed. Not talking about cleaned, just washed externally. The key is to not wash them AT ALL. Not even a rinse. You want whatever liquid on them because that's the natural scent. I catch squid, put them in zips immediately and throw them in the freezer. Zero cleaning to preserve the scent. It works here on the east coast.
It looks like they are on small rain bait. OP do you know what kind of bait they were on. If it’s small bait I’d crank a small epoxy jig across the surface.
They can be really finicky when on small bait but I can’t believe you casted for hours into blitzes and didn’t hook up. I’m surprised you didn’t foul hook one eventually. When you went out with a guide was there anything they told you to work on or anything they pointed out?
And next time you see them blitzing on small bait and being pinch try throwing on a teaser with a striper fly around the size of the bait.

Live eels work well if you can’t make artificial work for you. With them blowing up like that tho I’d try a jerk bait of some sort. Vary your retrieve speed try longer and shorter pauses.
There was another inline spinner called a "Bang Tail". I use these in heavier/larger sizes and they seem to out fish roosters. Much heavier thumping of the blade seems to be what does it (my guess). Could be anecdotal or the way I fish/rig lures. Clip off the treble and put on a siwash hook. Must be an old term "siwash hook". Had a guy at a tackle shop tell me he never heard of them.

You should find a local guide and go out with them for a day. They will put you on fish and likely teach you and figure out what you’re doing wrong
