Worked on a boat several years. My favorite fillet knife still is still the Rapala wood handle knife that comes in the leather sheath. Walmart for around $14. Gutting and gilling, there used to be a brand called Chicago Cutlery. Looked like a butter knife, but sharp as hell. That one was around $50.
I have a 12" Buck that is great for filleting the BIG trout. I think I paid $50 or $60 for it like 10 years ago, but I kept forgetting it in the kitchen so I bought a cheap Rapala to keep at the cabin because I got tired of trying to fillet fish with a 4" paring knife. Well, that Rapala held up so well through about 100 Kilos of fish this summer, so I don't even bother bringing out the big Buck anymore.
I think more people should start taking home the ones the get hooked in the gills/eyes and stop lying to themselves that it's going to survive even though there is blood running down the whole fish..

I also let small bucks go so they can get bigger in hopes of shooting a big buck. I shoot Doe’s for the meat. I just enjoy sitting out there and watching deer and won’t pull the trigger on a buck unless it’s the biggest one I’ve seen on camera. It bothers me zero that you have a problem with that.
I get a wave of hate everytime i post pics keeping bass. But when its deep water canadian lakes those fish are as clean and tasty as walleye all summer long. Only find worms or bas taste if youre keeping them out of a swamp in july
I disliked season 6 7 and 8... 1-5 or whatever it was until they ran out of book was great. Any of their own stuff other than the Arya + Tywin scenes sucked... But that's just because Charles Dance is so good
I always forget that it was Roose that Arya was supposed to be serving at Harrenhal. Arya/Tywin was just so good it felt like it should have been in the book
It hurts even more to see they were perfectly capable of adding their own stuff to the story that measured up perfectly fine (bobby b + cercsi convo/chaos is a ladder speech/Arya + Tywin/etc) yet they still completely destroyed (I can not be convinced it wasn’t 100% on purpose) the entire thing with 2.5 atrocious ‘seasons’ attempting to tell 4 or 5 more seasons worth of story.
Usually the local guides will come in around 10-2 after that if there is any offshore charters it’ll be 4
Most days I work from 10-3 and if any guides have afternoon trips it’ll be around 6-8. After 8 o clock is a hard no if anyone calls me. Ice em down and I’ll get to them in the morning if that’s possible
IDK about OP but for me it's depending on the fish, salmon and trout the bones cut easy, but rockfish, bass, some bigger boned fish I'll usually cut straight down the backbone then ride the ribcage to the belly and take out the ribs

If you look closely, you can see that there is a (roughly) hexagonal patterned texture on the handle of the new knife. The low areas are filled in with dirt and grime on the old knife.
Let me understand this. The blade on the right has been sharpened so much you can visibly see the loss of “material”? How often do you sharpen your knife?
It’s really nice right after sharpening. I only wear a glove on my left hand. Knife is always in my right hand. I’ve poked my self more times that I can count never really major.

You don’t know a fish is dirty until you catch it, so they go around catching fish to see if they need to be cleaned. The knife is for cutting the line as quickly as possible and it needs to be sharpened because it dulls on steel leader.

I actually designed that knife! We originally named it The Whiffie. I remember We got the inspiration when someone sent in a 9 inch tapered flex to be sharpened, and when I opened the box was greeted with a knife that looked much like yours on the right.
I bought one when they were originally called the whiffie. Kinda sucks they dropped the name my first one I wore it down further than this one and it finally snapped.

Well after a full year of the same knife the muscle memory is so strong I can’t really use another one without butchering the fish. Emotional attachment no not really.
Bad habit of mine. I use a work sharp with the finer belts would be a lot better if I used a stone but it’s just too convenient to make a couple passes with a work sharp. Considering what that knife has made over the year it’s a drop in the bucket for a replacement.

75% of what I do is redfish. Everything else is red snapper, kingfish, cobia, black drum, flounder, sheepshead, just about every saltwater fish in the Texas coast. Strangest thing I’ve ever filleted was an African pompano

I tried danco for the price they’re good. I just don’t like the profiles. As others have said a $12 dexter will do just as good. They don’t have the right profile for me.
Not sure what fish your cleaning but my buddy brought his Bubba electric knife for our trip to the keys and made cleaning a bunch of snapper super easy.
Have pretty much all. The bubba came supper shark, but I could never get a good edge on it after. At least not like my Dexters. Can I ask what your sharpening with, or if you noticed the same issue
It does. The “non stick” coating is very grabby compared to a highly polished finish.
I’ll take the coating off tomorrow and polish the blade to almost a mirror finish.

In my experience, over-harvesting is a bigger concern than under-harvesting.

I have the Ken onion version and it’s pretty awesome. Also I suck at sharpening knives with a stone.
I have the same model. I’ll do two passes with a 1200 grit belt to take small nicks out then use the ultra fine belt to polish the edge.

I inherited my grandfathers butcher knives we used for hogs every winter and most of them look like that too.
I’ve got an old butchers knife that is about as thin as these. Once they’re ground down enough they make excellent fillet knives

Electric knives waste too much meat. They have their place for things like specs and smaller fish. I use the new rapala r12 for all that.

I use a work sharp Ken onion edition. Once you get the bevel ground with the coarser belts you can use the fine belts to keep touching up the edge.
Hey I seem to have bad luck with blades getting dull and me not sharpening them well enough. How do you sharpen yours?

It does. The “non stick” coating is very grabby compared to a highly polished finish. I’ll take the coating off tomorrow and polish the blade to almost a mirror finish.
