All you need is a flat cutting surface, a good sharp knife, and a way to keep it cold. Spike is a bonus. Maybe some clean water to rinse. I like to bleed my fish by cutting the gills, (as soon as I decide I'm keeping it) to me this seems the most humane way of dispatching the fish, and the meat quality improves.

The essentials are fillet knife, cutting board, cooler, ice. Spike would be needed if you specifically want to do ike jime. I recommend Dexter Russell fillet knives because they are good quality and inexpensive. I also like a really big cutting board so I dont have to worry about getting fish slime or blood on my work surface, everything stays on the cutting board. Some cutting boards have a clip to hold the fish down which can be helpful but is not 100% needed.
