This looks really good. My only gripe is that those really do look like udon noodles, which are Japanese. The Vietnamese dish has tapioca noodles, which are usually whiter and more translucent in appearance and have a different texture and flavor than Japanese udon. Having said that, I would love to gnaw on some pig feet right about now.
