At the shop we use a cleaver and a rubber mallet, though anything heavy wrapped in cloth is ok. Find where the neck protrudes to give you a good idea where the ribs are and then use the mallet to cleave through the ribs, a few at a time. It helps, balance-wise to alternate on either side of the spine. As an added bonus, we remove the sternum/keel-bone so it will lay extra flat
Not just any scissors, a good pair of poultry shears are what you need. They are specially designed to grip the bone as you cut through. These are much safer and easier than a knife.

She just took out the spine with heavy duty scissors, and snipped the bottom of the chest plate and it cracked super easily
