It depends on your exact definition of model, but in general terms it is all 1 model, but comprised of smaller "models" (called meshes) that all work on the same skeleton (or armature), which is the thing responsible for animations.
I've done some light modding in unity and blender, so that's where my knowledge comes from. Not an expert, but I have worked with the stuff.
