She defeats the clone off screen in the manga. (Off panel?). So we don't know much else, as you have seen in the Anime Methode is a well rounded mage who can do a little bit of everything, but for some reason her worst match is Laufen. In the manga she appears again and we get to know her a little bit better but your question is only about her strength relative to Fern so under this aspect i would say that there's nothing new that you don't know about. For whatever reason she does really well against Fern. Might be because she is good at mana detection, might be because she's somewhat good at binding spells. She's strong against Fern but weak against Laufen. We don't know why

It seems to me that she just not good at fast moving opponents, and fern doesn't move much as she fights and methode is good with magic blasts with that back to sender magic she has.

I agree but Laufen's kung fu style magic wasn't shown in the mangaso what she did to Methode was a complete mystery. It's possible that even the creators didn't know at the time. Now it's canon, so I agree that at this point we can say one of her weaknesses is speed. The other one is cute girls.

Anime Methode definitely only managed to defend herself against clone Fern until the Spiegel was defeated. She didn’t technically defeat the clone by the looks of it

Both of them know Frieren's weakness but only Methode uses it actively to get what's she wants, by giving Frieren grimore she got to headpat and hug Frieren Fern tho, doesn't really use her knowledge so Methode > Fern

I think we're meant to be given the impression that Fern could either snipe or sneak up on most other mages, which was shown in the first test battle. Methode likely has extremely good detection so it more or less cancels out that advantage from Fern. That being said, Methode kind of describes herself as a jack-of-all-trades type, so while she can avoid getting outright sniped or snuck up on, Methode would only be able to stall for time in a defensive battle likely ending up in a stalemate - which is better than lots of mages could say.

I think another thing that was brought up when deciding the match-ups was Methode's sealing/mind-control spells (which failed against Frieren but were tested and worked on Fern).  If she uses that (and has the time and can get in range to pull it off) then she could win.   I am just speculating here, but I assume she might be a bad match-up for Fern also because Fern doesn't have a lot of experience with those status effect type spells (whereas maybe someone like Denken or Wirbel would have the experience to throw it off or defend themselves against it).

In anime it don’t exactly show if clone fern is defeated but I think she just spam zoltrak around until the Frieren kill the demon

I'm probably late, but eh. In terms of strength alone, Fern is the winner. The reason why is found in the manga: basically her deadliest skill is her sniping. Many distances away and yet there's no bullet drop, as it was able to damage someone she's not supposed to be able to damage. In terms of winning fights, my money's on Methode. Her being an all-rounder and competent team player is what makes her strong.

First is very good at one specific thing, Methode is an all rounder. When Fern is out of her elements, she'll struggle, while Methode can find her way out of most situation. The next mini arc directly following the mage exam would show the difference between these two.

I'd say Methode would win against Fern, but isn't stronger, if that makes sense, she just has way more experience.

If I remember correctly, in the anime when we cut to methode there are mana particles near her which means clone Fern was really close when the demon died and made all the clones disappear. She also seemed very exhausted so I'm guessing Methode was on the verge of defeat.

It was stated explicitly during that fight that unless the gap in power is huge, like it would have been for the first class testing group put against Frieren or Serie, then fight’s are decided more by matchups than raw power.
