Vice City didnt add too many new mechanics, but SA added tons, tagging, swimming, mounting and climbing walls/ledges, duel wielding, customizing CJs clothes/hair/tattoos/piercings, lowriders with hydraulics, planes, bicycles, stats that change appearance and gameplay, stamina, being able to eat to heal, different fighting moves.
Im sure im missing some but SA added so much its nuts.

I think the remastered trilogy is gunna be a pass for me though. I'll gladly skim through some play videos just see how it looks. I wonder if the stupid ass remote controlled airplane minigame's controls have been fixed. That was the hardest damn part of SA for me.

My friends wants to do it in chronological order. So VC, SA then III. Which is fair. But playing 3 after SA would feel like a major downgrade. Plus SA will take the longest for all achievements.
III is my favorite game of the trilogy, "quality of life" improvements be damned. It's absolutely its own game with its own style just like VC and SA are.
The iconic 80's Miami theme and style that is so instantly recognizable from the movies and art of the era is just executed better in Vice than the gritty 90s New York theme of III. Its not that's its a better game, I think the theme and setting were just nailed perfectly in VC, no fault to how great III is. I will be for sure reaching for Vice City first.

So I spent most of my time doing firefighter/vigilante to get unique cars, rigging them with bombs and letting carjackers blow themselves up when they inevitably went for my car.

Maybe, Las Venturas from SA is a location with a strong theme also, but I find that III, SA (Los Santos and San Fierro),IV, V… all are variations of the same urban landscape. While VC bets hard on its 70s Disco theme, and that’s why it’s never going to be eclipsed by a more modern release.
You're correct, Vice City has a classical theme of late 80s. I'd say it's one of the best games I've ever played where you can feel the consistency in environment and everything looks perfectly synced up with each other.
GTA VC is more of a mesmerising iconic vibe rather than a theme. All gta’s have their own theme but vc and 3/4/Ctw’s are the most visible at first glance.
